How To Make Eggless Wheat Cake Rusk at Home: Easy Fennel Biscotti Recipe


Eggless biscottis or sauf rusks have been a childhood favorite this side. I have fond memories of my teen years - everyone has! My memories make me nostalgic and  some of my food experiments connect me to my roots. Yes, I have been in love with simple fennel rusks since childhood, for these double baked beauties were the first snack I learned to savor.

I remember waking up everyday to a glass of hot milk and plain rusks before me. My dearest mom would make sure her kids never went hungry and also woke us with a smile on her face and a glass of milk in her hands.

The days of such pampering are long gone, for I kick-start my day with 2 glasses of lukewarm water nowadays. 

Yes, I have become more health conscious now, though I always have been a health freak. Mom is still ready to pamper me this way when I go to meet her, but my health conscious side does not allow me to get this kind of pampering now.

Relatives and close friends have seen my transformation. But this does not mean I was bulky types, though I wasn't in the best shape earlier.

Anyway, I won't hijack my eggless biscotti post with my nostalgic memories.

There is more to this whole wheat rusk recipe than my memories.Bursting with fennel aroma, it does offer you umpteen health benefits from this spice, which is a major digestion aid.

Coming back to the easy wheat cake rusk recipe, I love every bit of it, for it has the goodness of whole wheat, oatmeal, and chickpea gluten flour.

Bursting with the flavor of fennel is my whole wheat rusk recipe. Easy? Well, it is a breeze to bake these double baked beauties. Any takers?

This is the perfect recipe for someone that has just entered the world of baking and wondering how to make eggless wheat cake rusk at home.

Tip: The dough for cake rusk has to be loose & sticky; unlike typical cake batter 


Healthy Cake Rusk Recipe Ingredients
1 cup wheat flour
1/2 cup oats (ground ) (you may replace with whole wheat or any other healthier grain)
1/2 cup besan (gram flour)
1/2 cup- milk powder
1/4 cup- milk
1/2 cup orange juice (2 oranges) or lukewarm water
1/4 cup olive oil or saffola or any other vegetable oil (you may even use butter or ghee)
1 tsp - baking powder
3/4 tsp- baking soda
1/2 cup- jaggery/sugar powder (more or less depending on your taste) - I have used jaggery
1 tbsp- fennel seeds or saunf
1 tsp- ACV/apple cider vinegar or normal synthetic vinegar
1 pinch- salt




How to make Eggless Wheat Cake Rusk at Home
  • Preheat oven at 180 degrees for 10 minutes. (Microwave convection)
  • Grease a baking pan and keep aside.


Sieve wheat flour, powdered oats, besan, milk powder, salt,and baking powder. Do not add baking soda at this stage.


In a separate bowl, mix jaggery powder, fennel seeds, and heat the mixture. 


 Mix this hot water mixture with oil. 


Mix with milk and acv or vinegar. 


Whisk the liquid ingredients well.
Add baking soda to this water-oil bowl.


Look at the frothy mixture. 


Immediately mix wet ingredients with dry ones. Use your hands for mixing (I find it better than using any accessory).


It will be like a sticky dough. For rusk or cake rusk, this is the perfect batter consistency - the thicker the batter.  Pour into the baking pan.



Bake for 20 minutes at 170 degrees. I baked longer and my cake browned too much at the top.
Check if done or you can bake for a few minutes longer.


Take out the cake on a wire rack. Let it cool down for 20 minutes. Cut into pieces for cake rusk.


Place slices on a baking tray. Make sure there is some gap between each piece.
Bake one side for 10 minutes at 160 degrees
Bake another for 8-10 minutes.
Check if the cake rusks are done. If you find them little soft, you may bake a little longer.
