Oatmeal Cookies Eggless With Chickpea Gluten Free Flour

Oats seem to have become an integral part of my cooking. I can't think of recipes without including this healthy grain - which is the healthiest of all! Earlier, my impression of oats was something bland, tasteless and boring. I never wanted to include it in my meals. But the story has changed now, especially ever since my food experiments begun and I realized the importance of this fibrous grain.

By now you already know that I am a cookie lover and keep experimenting with different flour combinations to bake healthy, tasty cookies. I have already tried this combination before - but this time I included pistachio along with almonds. The besan oats cookies are the best I have ever had!

This is one easy oatmeal cookie recipe that you can try on stovetop. Yes, absolutely. However, if you wish to try it in oven, go for it
Some of my friends were surprised with the gram flour-oatmeal combination, but trust me you get the tastiest, crunchiest, and healthy oatmeal cookies you have ever had.

If you are in love with old fashioned cookies, then you have got to try this recipe – the unique combination of gluten-free chickpea flour and oatmeal makes this batch healthy and delicious.
Next I am gonna try oatmeal raisin cookies, for I am wondering how the combination would work. I think these would be chewy cookies with a sweet, savory flavor. Isnt it? Worry not, the next time, I try this recipe would love to share it with you all.


Homemade oatmeal cookies without brown sugar are certainly a hit in my family. In fact, this batch was made for my family in Patiala, and every one loved the distinctive taste of these cookies.

Ingredients
1 cup- besan/ chickpea flour/ gram flour
1/2 cup- oat meal (powdered oats)
10 pistachio (pista)
5 almonds (badaam)
2 tbsp- ghee/ clarified butter
2 tbsp- oil
2 tbsp- sugar powder (more or less)
2 tbsp- milk (depends on the dryness of the dough)
cardamom/elaichi
1 tsp- baking powder

Procedure

  1. Preheat oven (mw convection) at 180 degrees for 10 mts.
  2. Sieve besan, oatmeal and baking powder 2-3 times so that baking powder mixes evenly with the flour.
  3. In a bowl or food processor/grinder, add sugar, oil, ghee, and elaichi. Mix very well so that the mixture gets airy and fluffy
  4. Chop pista and almonds and spread them over a plate. Now drop the wet mixture over these.
  5. Next add the flour mixture with the wet ingredients.
  6. Gather the ingredients. Do not knead.
  7. If the dough feels dry, add milk. If you feel it's still dry, add one more tbsp of milk.
  8. We do not want sticky dough. It should be wet enough to bind easily.
  9. Make small lemon sized balls with the dough.
  10. Grease a baking tray and place the flattened balls over it.
  11. Make sure each cookie is placed at a distance from the other. Otherwise they will not bake properly.
  12. Bake at 180 degrees for 12-14 mts. Enjoy this healthy batch of flavorful besan oatmeal cookies with a hot cup of tea.

  1. Grease a thick/heavy steel plate and keep aside
  2. Place an iron skillet or tawa over high flame on stovetop.
  3. Keep a stand on the tawa.
  4. Cut cookies into desired shapes. Use a knife or fork to create designs or patterns on cookies.
  5. Place cookies at an equal distance from each other on the steel plate.
  6. Keep the steel plate over the stand.
  7. Cover the cookie plate with a big vessel. It will work like an oven.
  8. Lower flame to medium.
  9. Bake one side for 6-8 minutes.
  10. Change cookie sides and bake the other side for 5-6 minutes or until done.
  11. Cool them on a cooling rack.
  12. Dunk these healthy besan oatmeal no egg cookies in a hot cup of milk or tea.
