Suji Mango Cake in Cooker: Easy Semolina Cake Recipe Without Egg

A Little Story behind This Mango Cake



The smile you can bring on the face of someone through your trivial efforts does not have a match. It was the birthday of a 75-year-old neighbor, who does not have a strong financial background. Moreover, his only son, who is around 40 years, is not mentally strong enough to work outside. The boy remains with his pensioner dad, as his mother left for heavenly abode 6-7 years back.

Anyway so today was the old man's birthday. I wanted to cheer him up. So thought of baking a healthy cake for him. I decided to use a blend of semolina and mango and the end result was just perfect for a celebration. On top of it, I added jaggery powder as a substitute for sugar. 


Glad I could bring a smile to someone's face today with this semolina cake recipe without egg!

Semolina Cake With Mango Ingredients

How To Make Mango Cake With Suji

1 cup- 175 ml
2 mangoes-pureed (equals 1 cup)
11/4 cup- suji (semolina)
1/4 cup- oil
1 tbsp- thick curd
1/4 cup-1/2 cup jaggery powder (more or less depending on your choice and mango sweetness..i added only 3 tsp)
cardamom powder and dalchini (cinnamon)
1/2 tsp- baking powder
1/4 tsp- baking soda
Almonds, pistachio or nuts of your choice
2 fat pinches of haldi (turmeric)-- totally optional
pinch of salt

Semolina Cake Recipe Without Egg Procedure

  1. Sieve together suji, salt, baking soda, and baking powder.Chop mangoes and then throw them in the blender/grinder/processor along with jaggery powder, cardamom powder, cinnamon, haldi, curd, and oil. Churn well until it is a light and fluffy mixture. When it was my turn to run the grinder, there was an electricity cut. So I had use a hand whisker to whisk everything well. Doesn't matter! 
  2. Add half of slivered/chopped nuts to the wet ingredients. Keep the remaining aside.
  3. Grease a baking pan or place a butter paper in the pan.
  4. Preheat the cooker. Remove the cooker whistle. Place a stand in the cooker. We do not need salt or sand. Thanks to Sonu for sharing this brilliant idea with me. Earlier, I was of the opinion that we need a layer of sand or salt to bake cakes in a cooker. Now I am happy we can bake without the same. It has made my task easier than ever!
  5. Mix dry and wet ingredients. Just fold in the ingredients. Do not over mix.  Else, this will make the cake dense.
  6. Sprinkle the remaining nuts over the batter.
  7. Pour the batter into the baking pan. 
  8. Place the baking pan on the stand in the cooker.
  9. Heat on a high flame for 5 minutes.
  10. Then slow down the flame to medium and bake the suji mango cake for 35-45 minutes. 
  11. Keep an eye on - insert a knife to check if the cake is baked properly from inside.
  12. When done, let the cake sit in the cooker for 20-30 minutes or until it has cooled down. Do not remove from the pan before it has cooled else it may crumble.
  13. Take out on a cooling rack. Let it sit there for half an hour.
  14. Cut into pieces and enjoy this healthy, delicious eggless suji mango cake.

    1. No, it does not. In fact, I was surprised too. Nevertheless, I have kept a separate cooker for this purpose. But it does not burn. Rest assured about it! If you add water, you may get a moist cake. I have done one with biscuits. It's my steamed biscuit cake and it turned out yummy.
