Yes, in addition to my yeast-free bread baking spree, today, I bring to you instant semolina bread - which is more or less baked like a cake, with the difference being in the amount of oil, sugar used. The soft, spongy, crumbly bread will steal away your heart and I am sure this eggless, no yeast bread will become too common in your home. Yes, do not be surprised if sandwich bread makes an entry into your regular meal planning.

I do not say you will forget the yeast bread from the market, but for people with allergies, this semolina bread makes a great substitute, for


  • it does not use yeast
  • it does not use maida/all-purpose flour
  • it does not require kneading
  • it does not require proofing
  • it does not require anything other than semolina

Why is Maida Bad?

The semolina bread without yeast has a sweet and subtle flavor imparted by golden syrup. Bursting with a unique aroma of semolina, the no knead bread recipe is a keeper for people who do not have the time or patience to wait for proofing.


Of course, this saves you from using yeast as well.
Moreover, the bread has a great texture, flavor, and taste and has an edge over maida/all-purpose flour breads. The yeast breads are lighter and fluffier compared to no yeast breads.

When the bread was baking in my oven, my whole house was filled with a unique aroma that I wanted to open the oven and savor the baking goodie!!

Is semolina whole grain is a question that often pops up in the mind of health freaks.

Compared to whole wheat flour, which comprises endosperm, bran, and germ, semolina flour only comprises the endosperm and is higher in carbs. It is a healthier alternative to all-purpose/white flour but not better than whole grains.

Thanks to Parul Bansal for sharing her semolina bread recipe in my group, which inspired me to try its no yeast version.

Ingredients
1 cup-175 ml
3 cups- semolina (suji)
2 tbsp- milk powder (or rice flour/barley flour)
3 tbsp- olive oil (any other vegetable oil will also work)
1 tsp- salt
2 tbsp-golden syrup with jaggery (check the video below to make it at home) -- yeasted breads have more flavor, so the golden syrup here is added as a flavor enhancer..you may replace with 1 tbsp jaggery if you do not have syrup handy
1/4 cup- curd
1 tsp- baking soda +1 tsp lime juice (you can use 1 tsp of baking powder as well...I didn't due to allergy ..if you use baking powder, then add 1 tsp baking powder +1/4 tsp baking soda))
Warm water to make batter, more like a loose sticky dough
Little lemon peel grated (lime zest)---optional

Procedure

  1. Mix semolina, milk powder, salt, and rice flour. You may add milk powder to enhance the taste...rice flour is optional...it is a substitute for milk powder...of course you may use both in equal quantity, that is, 2tbsp each.
  2. In a separate bowl, add olive oil,honey, curd, and baking soda+ lime juice
  3. Whisk the wet ingredients well. It will get frothy when you add baking soda.
  4. Add grated lemon peel for aroma. You may skip this step.
  5. Mix wet and dry ingredients.
  6. Add warm water to make a thick batter or very loose sticky dough. This is more like a cake batter.
  7. Meanwhile, preheat oven/airfryer to 180 degrees for 10 mts. Airfryer needs only 5 minutes of preheating.
  8. Pour the batter in a greased pan.
  9. First, bake or airfry for 30 mts at 180 degrees. Brush the top with milk.
  10. Bake or airfry again for 20 mts at 170 degrees. (Keep an eye on your bread after 10 mts of extra baking)
  11. As soon as you remove the semolina bread from the oven, brush the top with butter and cover with a moist cloth. This will help keep it soft for 2 days.
  12. Keep the no yeast bread in the refrigerator covered with a moist cloth.
  13. Cut into pieces and enjoy.
