What is in pizza focaccia recipe that attracts you the most? Ever wondered that your favorite flatbread is a blend of maida (white flour/all-purpose flour) and yeast? I personally never eat outside food, nor advise others to go for maida.

We are all fond of the garlic flatbread recipe no yeast of course!

Regarding yeast, my research shows many people get allergic to it. Moreover, these days, yeast is artificially introduced. It is a living single-celled fungus that could cause all sorts of health issues, including:

  • headaches
  • gastric problems
  • skin allergy
  • allergy symptoms
For many with stomach disorders, yeast could be a problem. It also releases histamine, raising allergy and infection symptoms.
Those with blood disorders should also avoid yeast.

Imagine the benefits you would derive from a no yeast focaccia pizza recipe that uses no chemical agents, no preservatives, no artificial ingredients, and of course no GMOs!

My yeast-free bread experiments are the result of hit and trial. Thanks to age-old methods of overnight fermentation that has given me this unique no yeast bread recipe that your family would instantly fall in love with.


I am no perfect baker – still in my nascent stage. I am on a mission to raise awareness about healthy eating. My food experiments are a result of this.

Of course, I want to make healthy recipes - healthy food that can save you from umpteen number of health issues.

The unique pizza focaccia recipe is a step in that direction - formulated with select ingredients that do not use added yeast.

Now you already know I do not choose maida for my recipes. Here is the reason:

Why Use Olive Oil
Olive oil is quintessential for focaccia recipes. You will find it in most Italian pizza recipes. Moreover, it is healthier than other cooking oils and butter.

Ingredients
1/4 cup- fermented urad dal mixed with suji (I had made fermented idlis with this mixture in the morning and used the same for baking in the evening after adding more suji)
1/2 cup- suji
1 tbsp- honey or golden syrup (homemade) or jaggery powder
1/4 tsp- salt or little more
10 Roasted garlic cloves(the more the better)
Dried mint leaves/powder
coriander powder
red chilly powder (optional)
Boiled black chana (chickpea) -optional - I had a few in stock, so added - you may replace with any other ingredient that you like
You may add any seasoning of your choice
3 tsp- olive oil
2 tbsp- hung curd
water - if it looks like dough - remember, it should be like idli batter (slightly thicker)

Procedure
Once you learn the procedure, you won't believe baking an easy homemade Italian bread without yeast is such a breeze. Of course, it is healthier than the market junk.
  1. Ferment urad dal and suji overnight. I had soaked 1/2 cup of urad dal powder with 2 cups of suji. Made it like idli batter and let it sit overnight. I also added little fenugreek powder. But it is completely optional.
  2. Next morning, the mixture was ready for idlis. I made idlis and was left with 1/4 cup of this batter.
  3. I mixed the remaining batter with 1/4 cup suji immediately.
  4. Mashed roasted garlic cloves and mix with the batter.
  5. Added honey or homemade golden/jaggery syrup, 1 tsp olive oil, and salt and let it rest until noon.
  6. Then when I was ready to experiment with it, I again added 1/4 cup suji to the batter. It has to be a thick batter - little thicker than idli batter. If it looks like dough, please add little water to make it thicker batter-like. Rest for 10 more minutes if you add water.
  7. Now grease a baking pan. Keep aside.
  8. Mix hung curd with boiled black chana and coriander powder for topping. Add little salt as well. YOU MAY USE TOPPING OF CHOICE
  9. Pour the batter into the baking pan.
  10. Now pour the hung curd mixture over the batter in the baking pan.
  11. Use a spoon or spatula to spread the mixture.
  12. Sprinkle mint leaves all over the batter.
  13. Bake for 10 minutes at 180 degrees,
  14. Take out and pour 2 tsp of olive oil evenly over it.
  15. Again bake for 8 minutes.
  16. Enjoy this no yeast pizza base with any condiment of your choice.
  17. It tastes equally great without any condiment.
  18. I had it with my tea and loved every bit of it.
  19. Please give this yeast-free pizza a try once, and you won't ever feel the need to go for the market junk.
