How To Make Eggless Whole Wheat Cake With Almond Butter, No Egg


This is another of my experiments with baking with whole grains.
Perhaps you have seen me experiment a lot with almonds. You have also seen my cookie experiments with almond butter. This time I have come up with an almond butter cake with whole wheat.

If you have been wondering how to make eggless whole wheat cake with almond butter, then this recipe may come in handy.

Since my almond butter banana ice cream experiment was a hit, my hands have been itching to include almond butter in my bakes. This was the perfect day for another experiment.

The whole wheat cake without egg is going to be a hit in your family. We loved this eggless cake, bursting with almond butter flavor.

I am sure the whole wheat cake recipe won't disappoint you either.
The best thing about this baked beauty is that you can experiment with flavor - add either bournvita to tempt the taste buds of kids or include coffee for flavor for elders. All in all, it does not have an overpowering taste or flavor of any of these flavoring agents.

Ingredients
1 cup whole wheat flour
3/4 tsp- baking powder
1/2 tsp- baking soda + 1/2 tsp lime juice or vinegar
1/2 cup- Almond butter (here's how you can make homemade almond butter) - 20 almonds +2 tsp oil
1/4 cup-milk
2 tsp- bournvita/Powervita/1 small sachet of coffee/ 2 tsp of cocoa powder (optional - I added for color)
1/2 cup- curd
1 tsp- roasted flax meal (alsi powder) soaked in 3 tsp of water for 10 minutes (optional)
Salt pinch
Jaggery powder (gur powder) or sugar- 1/4 cup or more depending on your taste
cardamom (elaichi), cinnamon (dalchini), fennel seeds (saunf)

Eggless Almond Butter Cake Procedure

  1. Soak flax powder for 10 minutes. Then run a spoon into it and you will find its gooey texture, just like an egg.
  2. Preheat oven (microwave convection) for 10 minutes at 180 degrees
  3. Let's first make almond butter. - Dry roast almonds and then let them cool. Then grind them to powder. I used pista as well along with almonds. However, including pistachio is optional. Add 1 tsp of oil and green cardamom. You may add cinnamon and fennel seeds as well. Run the mixer again until you get a butter like texture. Be patient, as it may take a few minutes and your grinder may get hot. Here's the video to make almond butter at home.
Now add sugar to it. Run the grinder once. Next add curd, milk, and flax mixture. Keep the wet mixture aside.

Sieve baking powder, baking soda, salt, bournvita/coffee, and wheat flour.

Make a well in the center of the dry ingredients. Pour wet mixture slowly. Keep mixing. Do not overdo. Add lime juice or vinegar and give it one final mix.
Grease a baking tin and pour the batter, which will be like very sticky dough. It is unlike the typical cake batter.
Bake for 25 minutes at 180 degrees. The baking settings may vary from one microwave to another.
Insert a toothpick to see if the cake is baked properly.
Cool the almond butter wheat cake on a cooling rack for 10 minutes.
Cut into slices and enjoy another healthy cake.

Baked Sev With Gluten Free Chickpea, Rice, Oatmeal

I have been madly in love with chaklis ever since I tasted them the first time in my hostel 10 years ago. A close friend from Tamil Nadu - granddaughter of the then chief minister M.Karunanidhi- was my hostel mate. She introduced me to these crispy bites and my love for these crunchy snacks has only grown with time, though the health freak  in me makes me think twice before trying the recipe out.

My marriage in an odiya family has also guaranteed that I get a constant supply of chaklis to savor whenever I am in Odisha :)

Now since I have been trying to make everything healthier, I wanted to make chakli or sev for a long time. But never had the courage to do so.

Today tried my hands at sev making for the first time. I am happy with the results, since I chose to bake the crispies instead of deep frying them.

Is chickpea gluten free?
Of course, gram flour is gluten free.

Ingredients
1/2 cup- besan
3/4 cup- rice flour
2 tbsp-oatmeal (optional)
2 pinches of baking soda
salt, little sugar
2 tsp- achaar masala (instead of oil, I used oil mixed with achaar masala for a little tangy taste) - or you may add hot oil for crispiness
cumin seeds (jeera), sesame seeds (til)
Water- to knead soft dough (but not too soft)
black pepper (kali mirch) or red chilly powder

Baked Sev Procedure


  1. Preheat oven at 180 degrees for 8 mins.
  2. Mix oatmeal, besan, rice flour, and baking soda.
  3. Add salt, sugar, jeera, til, kali mirch or lal mirch
  4. Mix achaar masala or oil. Rub with hands. It should be little like bread crumbs.
  5. Add water little by little - 1 tsp at a time.
  6. Knead into a soft dough.
  7. Take a sevai machine and make sev
  8. Grease a baking tray or place a butter paper on the tray.
  9. Bake the sev at 180 degrees for 18-20 mins.
  10. Enjoy besan sev with tea or as snack. I love to munch on them with roti or rice.

Eggless Atta Cake: Gur, Ginger Cake With Whole Wheat

Baking with whole grains can be addictive, especially if you love cakes.

If you spice it up with ginger, you get a delicious spicy cake with atta. Oh yea - a ginger cake.

This is a simple gur gingerbread cake with whole wheat. Call it atta cake or ginger cake, it is bursting with flavors from roasted nuts and spiced up with ginger juices.

Yes, the cake does not use sugar, substituting it with jaggery powder. For a spicy twist, I have added ginger. It works as a tea cake. You may make a dense ginger cake with just 4 key ingredients - eliminate milk, curd, and oil from the recipe and replace them with clarified butter to make a dense tea cake that everyone will love.

But mine is a healthier and lighter version of tea cake with ginger.

Eggless Ginger Cake Ingredients
wheat - 1 cup
suji/semolina- 1 tbsp
Oatmeal- 2 tbsp (optional)
Ghee/butter- 2 tsp
Oil-3 tsp (you may substitute with ghee for richness and taste)
curd- 3 tbsp
Ginger- 2 tsp
Milk- 1/4 cup
Lime juice/vinegar- 1 tsp
Gur powder (jaggery) -4 tbsp or more - depending on your sweet tooth
baking powder-1 tsp
baking soda-1/2 tsp
roasted flax powder - 1 tbsp
Lukewarm Water- 3 tbsp
Roasted almonds, nuts
cinnamon powder (dalchini)


How To Bake Eggless Wheat Ginger Cake

  1. Mix flax meal and water. Keep aside. Adding flax is completely optional.
  2. Mix milk with lime juice/vinegar. Set aside.
  3. Sieve baking powder, baking soda, wheat, suji, and oatmeal three times.
  4. In a separate bowl, take oil, ghee/butter, curd and jaggery powder. Add cardamom and fennel. Throw in grated ginger. Mix flax meal mixture. Whisk well until fluffy.
  5. Preheat oven (microwave convection) at 160 degrees for 8 minutes. 
  6. Mix wet with dry ingredients. Add the wet mixture little by little. Mix with hands.
  7. It will be a loose sticky dough - not batter.
  8. Top the gur ginger cake with roasted nuts.
  9. Bake at 160 degrees for 30 minutes. Time may vary from one oven to another. I have used my microwave convection for baking.
  10. Enjoy this eggless wheat ginger cake with a cup of hot tea.


Aloo Methi Sprouts Stir Fry: Indian Recipe

I love methi (fenugreek) and enjoy aloo methi sabzi during winters, especially mom-made.

After marriage, I hardly get a chance to relish the sabzi made by her.

We miss aloo methi during summers. Of course, we do not find methi leaves during the hot season.

Recently, I found Radha Natarajan - a friend and fellow blogger - share methi sprouts. Click here to see how to make methi sprouts. Immediately, I made sprouts and was wondering what to do with it.

Today, I saw another post from Radha Natarajan, where she had used methi sprouts with potatoes. She shared the recipe with me and I made just a few adjustments and instantly went ahead with the recipe.

Now that I have tried the super easy recipe and was amazed to see the results. It tastes just like methi aloo sabzi. Oh I am loving it. My summer cravings for methi aloo have an answer now. Wow!





Ingredients for Aloo Methi Sprouts stir fry

1/4 cup - methi sprouts
4 boiled potatoes (you may take unboiled ones even)
turmeric, coriander powder, red chilly powder, sambar masala (check the recipe of sambar masala here), jeera
coriander leaves
oil - 1tbsp

  1. Cut boiled potatoes into cubes and marinate with salt, haldi, coriander powder, and sambar powder. Keep it aside. If you are taking unboiled potatoes, then you do not need to marinate them. Rest of the procedure is the same.
  2. Take oil in a pan.
  3. Add jeera
  4. Let it splutter.
  5. Now add marinated potatoes and methi sprouts.
  6. Saute both.
  7. Cook & cover for 5 minutes on a low flame.
  8. Take off the lid and add salt and the required amount of masala powders.
  9. Garnish with coriander leaves and again cook & cover for another 3-4 minutes.
  10. Enjoy the aloo-methi sprouts stir fry with roti or rice.

2-Ingredient Nana Ice Cream; Banana-Almond Butter Scoop

I love ice cream but try to avoid buying it outside, for the fear of adding calories. Who does not love creamy, butter ice cream? No one, I am sure.

I try to make it at home, with minimal sugar and cream.

Now I am presenting to you ice cream in a new avatar :)

This scoop uses just 2 ingredients - almond butter and chilled banana!

Now let's go to the recipe.
Before making this super quick ice cream, we will need to make almond butter.

Let's make almond butter first.
Ingredients

Almonds- 18-20
Oil- 1/4 tsp (or I added a few drops)
Cinnamon powder, elaichi (green cardamom) - you may increase the types of spices as per your choice


Procedure

  • It's super easy to churn out almond butter. Since I was making it for the first time, I took just a few almonds. You may increase the amount of almonds, as per the desired amount.
  • Dry roast almonds for a few minutes. Keep stirring so that you do not end up burning them too much.
  • Next let them cool down.
  • Then take a grinder and grind roasted almonds along with cinnamon and elaichi.
  • Once almonds are powdered, add oil and give it more churns in the grinder.
  • Be patient enough to keep grinding the stuff, as this will take a few minutes.
  • Keep churning until you get a greased almond butter :) That's it!!
  • I tasted it at this moment, and it was yum!! Control the temptation to taste it; else, you will be left with no almond butter.

Now let's make banana-almond butter scoop/ice cream. For that, you will need chilled bananas. Since I was making a small amount, I took just one banana.

Ingredients
1 ripe banana
1 tbsp almond butter (add more to increase the buttery/creamy taste)
Honey as per your taste...I added just a couple of drops

Procedure

  1. Slice banana into small pieces. Keep them in zip lock bags in a freezer. I kept the banana as a whole. But better to peel off the skin, cut into pieces and then freeze. You will get a better texture for your ice cream.
  2. Run the chilled banana pieces into the food processor. 
  3. When you get the creamy texture, add almond butter & honey and run the grinder again until you get the silky smooth texture.
  4. Garnish with almond flakes. Chill if you want.
  5. I kept it in freezer for 3-4 hours.
  6. Enjoy healthiest banana ice cream.
