Summers are here, and you cannot wait to indulge in guilty eating. Perhaps, kulfis, desserts, and ice creams are a hot favorite in the summer season. But what if you are watching weight? Can you indulge in a guilty treat? Perhaps not, But there's a way out! Yes, I prepared this healthy, nutty oatmeal kulfi at my mom's place a few days back, and surprisingly, the no sugar kulfiwas loved by my brother, who hates oats - to be precise.

It was only after he had tasted it did I unravel the "oatmeal" secret.

But no sugar does not make it a diabetes-friendly recipe, for it uses honey as a sweetener.

 Since this kulfi with oatmeal got his stamp of approval, I knew I had the go-ahead to share this yummy summer delight with you all. I am sure you will like it too, if not fall in love with this healthy dessert.

 I call it healthy but not the healthiest dessert, because it still uses dry or evaporated milk powder.
Other than that, it is loaded with roasted nuts.
It comprises a base of almond meal - which is another nutty twist to the recipe.
Finally, it has my favorite roasted oatmeal, which raises its health quotient- perhaps making it a healthier dessert than the market junk.

You have got to be a little innovative to explore the potential uses of the humble oats.
To me, oats are a healthy addition to my meals.

So  let's see how to make oatmeal delicious.

Ingredients
1/2 cup- roasted powdered oats/oatmeal
1/2 cup- almond meal (here's how to make almond meal - click on the video below )
1/4 cup- evaporated milk/ dry milk powder
2 tbsp or more - honey (as per your taste)
Roasted nuts - almonds, pistachio, walnuts


How to make oatmeal delicious

1. Dry roast oats and grind them to powder. This is your oatmeal.
Mix oatmeal with equal amount of water. Let oatmeal sit in that water.
2. Take homemade almond meal and mix it with the wet oatmeal. Give it a good mix and allow them to sit together in the water overnight or for 1 hour at least. I kept it overnight in the refrigerator.
3. Dry roast nuts and keep them aside.
4. Take the oatmeal-almond meal mixture and run it in the food processor.
5. Throw in dry milk powder. If you want a more intense flavor, you may double the amount of evaporated milk than given in the recipe.
6. Run everything in the grinder.
7. Next add honey and again run the processor.
8. Pour the kulfi mix in a kulfi mould or any container of your choice.
9. Thrown in roasted nuts and allow it to freeze for 3-4 hours.
10. Enjoy yummy, oatmeal kulfi guilt free or less guilty indulgence.
