To me, these are unique cookies, but this is a simple cookie recipe that you can try out today, especially with easily available ingredients. You do not need any fancy stuff here to make gluten free cookies.
Flavored with honey, these crunchy bites use a mix of oats, coconut, and barley. If you are on diet and looking for a low fat, low carb recipe, this one should work. With subtle sweetness, this Anzac cookie recipe is a class apart from all other varieties of cookies with oatmeal.

This is an eggless cookie recipe, which omits eggs due to the scarcity of eggs during the time of war.
Ingredients for anzac biscuits: How to make oatmeal delicious
1 cup- oats1 cup- dry coconut powder
3/4 cup- barley flour (You may substitute barley with whole wheat flour for healthy anzac biscuits, though original recipes use white flour/ all-purpose flour)
1/4 cup-olive oil or butter (authentic version uses butter)
2 tbsp- ghee/butter (make ghee in 5 minutes here)
1/4 cup- raw cane sugar
1/2 tsp- baking soda
1 tsp- hot water
1 tbsp- honey or golden syrup (Honey can be replaced with jaggery syrup or maple/golden syrup.)
How to make oatmeal delicious with Anzac Cookies
Line up a baking tray with parchment paper or grease it.
Heat 1 tbsp of water and add baking soda to it. Keep aside.
Heat ghee and oil together in a pan.
Stir in baking soda-water mixture.
It will get frothy.
Add raw cane sugar and honey.
Stir in all the flours and coconut powder one by one.
Mix everything with hands.
Roll into small balls and flatten. The dough may feel crumbly but you can still make balls with hands or put them in an ice cream scoop and place on a baking tray. Else, you may add little amount of milk or water to bind it.
Bake in a preheated oven/microwave convection at 170 degrees for 8-10 mts.
Allow the Anzac biscuits to cool on a cooling rack before munching on crunchy bites.
