Chocolate is a mood enhancer - the ultimate comfort food. But is chocolate good? Are there any chocolate benefits? Well, there are both positives and negatives. If you crave for chocolates, take heart from the fact that dark chocolate has some health benefits. Have you ever tried making chocolate at home? Chocolate- the very word itself makes your mouth to water, right? Whether you are a teenager or an octagenarian, your love for chocolate knows no bounds. Of course, exceptions are always there. One living example is yours truly! I was fond of chocolates during school days. When the health bug bit me, I quit everything I was fond of relishing - butter, desi ghee, malai/cream, creamy kulfis, and chocolate. But since the demand of the times is a healthy homemade chocolate, especially when my nephew and niece are deeply in love with anything chocolate, I decided to accept this challenge to make milk chocolate sugarfree with cocoa powder.

When the final product was produced before my loved ones, one said, "Is it Cadbury's", another said, "it is Dairy Milk." Well, their remarks were enough to make me smile and feel on cloud 9. Of course, there is still room for improvement, as my homemade chocolate is not as solid as the market stuff, but it is yummy nevertheless - just like the packaged version. I know well where I have gone wrong and will correct it the next time. But at the moment, I simply wanna enjoy the fruits of my labor -yes, I am happy with the result, especially seeing my people enjoy every bit of homemade chocolate with milk and cocoa powder.

Next, I am going to revise my chocolate making journey with some twists, because I will be making chocolate at home for Paro and Sherry - my two cuties (niece and nephew).

Well, unlike professionals, I do not use any fancy equipment for my baking recipes or making chocolate at home.

Of course, professionals have an invaluable set of tools specially designed for your homemade chocolate adventure. But I do things in a simple way - as simple as it can get. Because I want to reach those with no fancy appliances and equipment. After all, everybody is not as lucky as a handful of us.
This reflects in my videos as well!

I have tried to keep my chocolate recipe healthier than other recipes available online, but it is still buttery, as I did not want to use coconut oil for vegan chocolate recipe because this is not going to be one. I have substituted sugar with honey. You may simply want to keep it as a chocolate sauce if you wish ti. The recipe should work well both ways.

A Little About Chocolate

Some types of chocolate are rich in flavonols, especially those loaded with cocoa powder. Antioxidants in chocolate may help control blood pressure levels, besides fighting cognitive decline. .

Chocolate is often considered the ultimate comfort food for a majority of us. Some relish it as a stress buster. For some, it is a reliable source of consolation, especially as a mood-enhancer. But is a chocolate at all healthy?

Research is under way to look into the benefits of chocolate for human health. Nevertheless studies claim that moderate consumption of dark chocolate

  • is good for the heart by helping restore flexibility of arteries, reducing inflammation, preventing blood clots because flavonoids in cocoa powder reduce blood pressure and improve blood circulation..research has revealed short-term benefits of chocolate on heart health. Studies are being done to look deeper into long-term benefits
  • prevents clogging of arteries by preventing white blood cells from sticking to the vessels
  • lowers risk of stroke - according to a Finland research report
  • promotes blood  circulation  throughout the body, including the brain
  • is a mood enhancer
  • is loaded with minerals, including selenium, zinc, and potassium
  • lowers bad/LDL cholesterol and raises good or HDL cholesterol
  • can help keep your skin healthy, protecting it against sun damage
  • helps in weight management - how? because it creates a feeling of fullness, which means you are more likely to eat less during mealtime-so if you're trying to lose weight, but are unsure how to go about your food cravings, snack on a dark chocolate 30 minutes before mealtime!
  • is a stress buster, making it a perfect snack for expectant mothers, who are otherwise at a risk of prepartum depression
  • improves blood flow to the brain and helps prevent dementia, mental decline, risk of Alzheimer's - performing the brain protective role
  • cocoa helps improve insulin sensitivity, so a bite goes a long way in satiating sweet cravings in diabetics while helping keep insulin under control
  • makes you feel good by upping the production of the feel good hormone - it  contains phenylethylamine - the chemical your brain produces when you fall in love
Did you know a 100gram bar of dark chocolate which has 70% of cocoa powder, provides 67% of the RDA of iron?
But a chocolate is calorie dense.
Remember, moderation holds the key here.Indulgence in chocolate can amount to guilty eating, which you do not want to do. Why? After all, a chocolate needs butter for the typial layering effect. Then it needs sugar to coat the bitterness of cocoa powder. However, this recipe gives you a sugarfree chocolate version. I have used honey in place of sugar, and got awesome results. I offered this to a close friend, who is mad about eveything chocolate, and she loved every bit of it.

Ingredients
1/4 cup- milk powder (for a milkier version, add 1/2 cup)
1/2 cup- cocoa powder
1/2 cup- butter/desi ghee (for a vegan chocolate recipe, substitute with coconut oil0
3 tbsp or more- honey or sugar powder/jaggery powder (vegans may replace honey with sugar or jaggery powder for a healthy twist) - with sugar powder, you will get a silky smooth chocolate, which you can't get with honey but to me healthy comes first.

Procedure: How To Make Chocolate at Home

Take butter in a pan. Place the pan in another pot, which has 1 cup of water.- the double boiler method/Baine Maire method. You may take a glass cassarole as the inner pot. However, I took a steel one only.
Let the butter melt. Lower the flame.
Add cocoa powder and milk powder.
Start stirring constantly.
Turn off the flame and add honey to the chocolate mix.
Mix everything well.
Pour in molds or in a greased flat tray. I placed a few roasted chopped almonds and then poured the chocolate sauce over the almond layer.
Freeze for 4-5 hours and enjoy homemade nutty milk chocolate sugarfree.
If you love chocolate, you cannot say no to this chocolate recipe - a delectable blend of oats and chocolate gives you a yummy kulfi dessert.

    1. The reason could be the consistency. If the consistency is not perfect, the chocolate could turn chewy. It has got to be on the thinner side, not too thick.

Ever imagines how to make curd without curd (with almonds) बिना जामन के दही ? Well, I am sure such use of almonds as a curd starter is nowhere in your thoughts, right? Perhaps we are not used to thinking on these lines until it happens incidentally and you want to share your experiment with others. Perhaps as a Punjabi, born and brought up into a Punjabi family, I have that special love and fondness for curd. My parents have inculcated in me good eating habits - home food is the best, they would day, preach and practice. This has become ingrained in my thoughts. I detest outside food, and yes, I dub it as market junk. One reason I love all homemade stuff - mommade food is the best. But w
