Power Packed Dry Fruit Oat Fudge No Sugar: Energy Boosting Oatmeal Recipe


How to cook oatmeal is a question disturbing most of us ever since the advent of oats. The very word sounds weird sometimes. The first time I heard the word "oats," it sounded something like rots. LOL.
But hardly was I aware of the immense benefits of oats. My very first attempt at eating oats was with the ready-to-eat masala oats. I do not even want to think of that experience - something that kept me from trying out this fiber-rich cereal grain for 2 years. Can you believe it?

Hubby said he won't ever eat oats, no matter how healthy and nutrient rich they may be. But ever since the cooking/baking bug bit me, I have been trying oatmeal recipes for breakfast and meals, savories, snacks, desserts, cookies, cakes, and sweets.

Anyway, coming back to the power packed dry fruit fudge with oatmeal, I made this batch of desi burfi on Lohri - the Punjabi festival that marks the passing of winter solstice. It is celebrated by lighting bonfire, singing hymns, songs, dancing around the fire, distributing sweets, especially prepared with jaggery and sesame seeds and nuts.

We do not celebrate Lohri since my grandpa expired this day 50 decades back. But this time it was different - I should say special at my mom's home, as this Lohri marked my brother's daughter's first. So to bless the baby, I made this dry fruit burfi as prasad for the Lords.

The fudge was another experiment, and it was successful. Glad that I did not use sugar for this recipe and tried making it in traditional way with jaggery.

Let's come back to the energy bar recipe:

Ingredients of Dry fruit burfi
4 medium pieces of gur (jaggery)
1/4 cup- sesame seeds
1/4 cup- poha (falttened rice/rice flakes)
10-almonds
4-walnuts (optional)
1/4 cup- oats
1 tbsp- desi ghee (clarified butter)
1/4 cup- roasted chana
pinch of salt
4 tbsp-water (1/4 cup or little less)
1 tbsp- roasted semolina (optional)

How To Make Oatmeal Fudge No Sugar


Dry roast oats and roasted chana.


Dry roast sesame seeds, almonds and walnuts. I had roasted these earlier, so couldn't take pic.


Roast poha/rice flakes. I had pre-roasted poha as well, so just added it to oatmeal while roasting.
Let them cool.


Grind everything to powder.


Add desi ghee to a thick bottomed pan. Throw in a pinch of salt.


Add gur pieces and keep on slow flame until the jaggery melts.

As soon as jaggery melts, add the nut and oats powder.



Keep stirring and then add roasted semolina. Mix well.


Next add water and cook until everything gathers like a mass.

Pour the mixture in a greased thali/plate or box.

Garnish with almonds. Press with a spatula or heavy utensil. Let it rest for 5-6 hours. I kept it overnight.

Cut into pieces and enjoy no sugar power-packed fudge.

Easy Yeast Free Focaccia: Semolina Bread

Hello again! This time it is desi focaccia again!

You have already tried my previous semolina focaccia recipe, isn't it? I loved that desi focaccia because I did not use any leavening agents there - no baking powder, no baking soda, as it was a naturally fermented batter. Here's the recipe if you are interested.


Nevertheless, I have come up with this desi pizza bread recipe upon request.

I hope you're enjoying my food experiments and innovations. It's been a while since I started baking yeast-free breads at home, for I realize not everyone uses yeast. It is a cause of serious allergy in some people. Some of you do not use yeast due to your religious belief. Fair enough!

We have this yeast free semolina focaccia recipe for you. I call it desi focaccia with semolina, because frankly, I have never tasted focaccia outside.

As far as my research shows, focaccia uses a generous amount of olive oil, which enhances the taste and gives the Italian bread a distinctive flavor and texture.

Since I have not used maida or white flour in the recipe, which is a standard bread ingredient, this is my humble yeast free focaccia for you.

Does it disappoint in taste?

Na, the pizza focaccia recipe doesn't disappoint.

I served the savory pizza focaccia bread to my neighbor and they enjoyed it thoroughly!

This is one easy pizza recipe no yeast that even kids can churn out within minutes. But yes, I would like to mention that I did not have unroasted semolina, so had to use roasted alternative. So the focaccia bread crumbled from one place while slicing.

Ingredients

1 cup suji
1/2 tsp- baking powder
1/2 tsp-baking soda
1 tsp- vinegar
1 tsp- honey
1/4 tsp- black salt
toppings of your choice (sundried tomatoes, olives, baked onions, peas, boiled chickpeas..or just about anything)
coriander powder
black pepper
1/4 cup -curd
1/4 cup-hot water
1 tbsp- hung curd (Greek yogurt)
3 tsp -olive oil
1 tsp- roasted and ground flax powder soaked in 3 tsp of water (we call it flax gel or egg) -optional
roasted and ground flax seeds


Procedure

Mix curd with hot water.
Throw in baking soda in semolina.
Add this curd-water mixture to semolina.
Let the mixture sit for 20 minutes.


Add flax meal to the mixture.

Now add salt, 1 tsp olive oil, honey to the semolina batter, which is more like sticky dough.
Mix well.
Next preheat oven (microwave convection) for 10 minutes at 180 degrees.
Meanwhile, grease a baking pan.

Prepare the toppings. I have used spring onion, tomatoes, and boiled white peas. Mix the toppings with black salt, powdered black pepper, coriander powder, herbs of your choice, hung curd, 1/2 tsp of vinegar, 1/2 tsp of olive oil.

Add baking powder to the semolina dough and 1/2 tsp of vinegar. Mix well.
Pour the semolina batter into the pan. Spread the toppings evenly on the batter.
Sprinkle coriander powder, little black salt, and black pepper.
Bake the yeast free semolina focaccia for 10 minutes.
Then turn off the oven and sprinkle 1 tsp of olive oil over the batter and bake again for 5 minutes.
Let the no yeast focaccia with semolina cool down before serving it to your loved ones.
Enjoy another healthy no yeast snack.


Chickpea Gluten Free Cookies: Vegan, No Sugar Recipe

With so much of fuss about gluten these days, you are certain to wonder: is chickpea flour gluten free? Of course, you are looking for gluten-free recipes, given the increasing incidence of gluten insensitivity among a large number of people.

Worry not! We promise to bring to you gluten free recipes that will keep you from gluten intolerance. The options are galore. All you need to do is find the right product and balance. Of course, the right ingredient that you are not intolerant to.

There are different ways to experiment with chickpea. Nowadays aquafaba is trending high among vegan and vegetarian food lovers. Aquafaba or chickpea water makes a great egg substitute for all recipes. Do give it a try. But there is a certain way to make the most of this water. Shall talk about it in another post. 

So coming back to the question whether chickpea flour is gluten free. Absolutely, chickpea is gluten free, so you can include it in your healthy regimen.

Chickpea gluten free recipes are easy and so so yummy. Chickpea flour lends a distinct taste to any recipe.

My love for cookies is no secret anymore. Since cookies are a favorite this side, I try to experiment with different ingredients to bring to you crunchy, crispy, delicious cookies. The chickpea gluten free cookie recipe, as its name suggests, uses besan or gram flour, or chickpea flour.

Actually chickpea is a versatile ingredient and makes delicious savory snacks, lip-smacking curries, finger-licking desserts and sweets, and delectable cookies. You already know of besan nankhatai. Or for that matter besan cornflakes nankhatai, which got viral in my food group and across many other groups. I must say it has a unique flavor.

Those who have tried the besan nankhatai with cornflakes once have done it an umpteen number of times.


This time even I wanted to recreate the same, but due to power outage, I was not able to grind cornflakes, so dropped the idea of including them to the recipe. So this gave me a chickpea flour cookies vegan recipe that I am in love with. The gluten free cookie recipe is shared below. 










Besan Cookies Vegan Ingredients
1 cup- besan (chickpea flour)
2 tsp- milk powder (vegan users may replace with dry coconut powder or any almond meal ...here's the recipe to make almond meal)
1 tbsp- cold butter/ cold ghee/ refrigerate for 30mts before use...vegan recipe may substitute with almond butter or olive oil
1 tsp- olive oil
1 tsp- flax meal (egg replacement - soak 1 tsp of roasted flax seeds in 3 tsp of water for 15 minutes and then use 1 tsp of the mix)
3 tsp- jaggery powder (or sugar powder) - please increase the amount as per your taste..I take less sweet

1 tsp- baking powder
Almond and pistachio

Procedure
  1. Mix all dry ingredients.
  2. Mix ghee, olive oil, and flax meal. 
  3. Add jaggery powder and cardamom to the wet ingredients and whisk until everything is combined.
Gather all ingredients. DO NOT KNEAD. Roll out the dough into a log or ball. Refrigerate for 30 minutes or 1 hour. 
Preheat oven (microwave's convection mode) at 180 degrees for 10 mts.

Cut the dough into desired shapes. 


Throw in slivered almond and pistachio. 


Place on a greased baking tray at an even distance. I airfried my gluten free cookies. If you wish to airfry, preheat at 180 degrees for 8-10 minutes. Air fry for 10 minutes. 
If you want to use oven or microwave, bake at 170 degrees for 10-12 mts.
