You are looking for a ragi cookie recipe, isn't it? Perhaps you love healthy bakes. Why not, what you get outside is simply junk, loaded with unhealthy ingredients - say maida/white flour, dalda, and refined sugar. If this isn't enough, the market junk is rich in trans fats. You can only expect to have high triglycerides and bad cholesterol if you continue to munch on market cookies.

This has inspired me to make everything at home. My love for cookies has only added fuel to the fire to cook healthy food.

Let's come back to the ragi cookie recipe.
I have included roasted moong dal for flavor. You may skip it altogether.
But it's a great idea to include lentils in your bakes to make your baking marvels wholesome - with fiber, proteins, and carbs.

Ingredients



1/2 cup-ragi/nachini/finger millet
1/4 cup- roasted moong dal
1/2 cup- oatmeal
2 tbsp or more honey
2 tsp milk powder
1 tbsp- ghee/butter
1 tbsp- olive oil
walnuts/nuts
baking powder/soda- 1/2 tsp

How to make oatmeal delicious

  1. Mix dry roasted ragi flour, dry roasted moong dal powder, and oatmeal.
  2. Add baking soda and sift well.
  3. In a different bowl, mix butter, olive oil, and milk powder.
  4. Now add honey to this wet mixture.
  5. Throw in nuts and mix.
  6. Next mix wet and dry ingredients.
  7. Just gather the ingredients. Do not knead.
  8. Pack the dough in a cling film/aluminum foil for 30-60 mts.
  9. Roll out the dough into a thick chapati.
  10. Use a cookie cutter or inverted lid or knife to cut cookie shapes
  11. Airfry the simple cookies at 170 degrees for 10-12 mts.
  12. Allow the ragi crackers to cool down before munching on them.

Perhaps biryani takes inspiration from the Mughals - whose lavish menus could never ignore biryani. My hubby makes delicious biryani - veg and nonveg both. These days we are not eating nonveg, except fish, for reasons galore.

If you have sudden guests at home, this palak biryani recipe can come in handy.

The green color of palak biryani is so tempting, while the aroma of whole spices is sure to tempt taste buds of just about anyone.

Palak Biryani Ingredients

1 cup - basmati rice
250 grams- palak/spinach leaves
8-10- garlic pods
small ginger piece
1 small cinnamon stick (dalchini)
1 green cardamom
1 big cardamom
1 clove (laung)
1 bay leaf
1 tbsp- oil
1/4 cup- water or just 2 tbsp,depending on your palak puree
veggies of your choice- carrot, peas, beans
3 tbsp- curd
garam masala, chicken masala
salt as per taste
3 pinches of sugar
1 tomato
1 onion
haldi/turmeric (just for marinating)

How To Make Palak Biryani in One Pot One Shot


OPOS sambar recipe- 5-min sambar
  1. Chop veggies and marinate them with curd, salt, turmeric, and garam masala. Keep aside.
  2. Chop one onion.
  3. Chop one tomato
  4. Wash palak leaves thoroughly. Add ginger and garlic along with chopped palak leaves to a mixer grinder and grind everything together.
  5. You will get palak puree. Do not add water.
  6. Take a 2 or 3-liter pressure cooker.
  7. Add oil, bay leaf, cinnamon stick, both cardamom pieces, clove..
  8. Add chopped tomato in the center. Then spread a layer of chopped onion around it.
  9. Next add a layer of marinated veggies. Keep half of this for the second layer.
  10. Spread rice evenly. 
  11. Add the remaining marinated veggies.
  12. Now spread palak puree.
  13. Add salt, garam masala, coriander leaves.
  14. Add just 1/4 cup of water since palak puree is already water. I got one and a half cup of palak puree so used 1/2 cup of water, but felt my rice got little sticky. So the idea is to use minimal amount of water.
  15. Cover with a lid. Do not mix. 
  16. Turn on the flame to medium and allow for 3-4 whistles.
  17. Allow the pressure to settle down.
  18. Open the lid,and mix everything.
  19. Close the lid once again until you are ready to serve a delicious palak biryani ready in one pot one shot (OPOS).

My love for eggless cake rusks and cookies is no secret now. You too love baked goodies. Perhaps bakery products aren't the best ingredients for a healthy lifestyle. But you can always make bakery products at home with healthy ingredients and turn them healthier - at least healthier than the market junk. Isn't it?

I love eggless cake rusks and cookies so I make sure I try out different variations. Now same is the case with biscottis or cake rusk.

If you are wondering how to make cake rusk at home, this is the right place to be in.

Previously I tried out the whole wheat cake rusk biscotti that was loved by one and all. Now it's time to try out suji rusk or semolina biscottis loaded with nuts.

 These nutty suji cake rusks are soft yet crunchy and yummy.
If you or your kidoo loves biscottis, then this is one batch of healthy cake rusks with semolina that you should be baking immediately.

 For kids, you may try adding cocoa powder or chocolate sauce to the wet ingredients and make chocolate biscottis.

They will not stop at one- trust me!

Ingredients for Eggless Suji Cake Rusk

1 cup- semolina
1/2 cup- oatmeal
2 tbsp- milk powder
1 tsp- saunf (fennel seeds)
1/2 cup- cream/malai
1/4 th cup- besan/chickpea flour (optional - replace with whole wheat/multigrain flour/oatmeal)
1 tsp- baking powder'
4 tbsp- sugar powder (please add more for a sweeter version)
1 pinch- salt/himalayan pink salt
1/4 cup- curd
1 tbsp or little more- water (please check the video for dough consistency)

1/4 tsp- baking soda
1/2 tsp- vinegar/apple cider vinegar (check benefits of apple cider vinegar here)

How to make  suji cake rusk/eggless biscottis


  • Mix semolina, oatmeal, and besan.
  • Whisk curd and cream until light and fluffy.
  • Add milk powder and whisk.
  • Add sugar powder and saunf. Whisk again.
  • Add both wet and dry ingredients. Mix well. Keep aside for 30 minutes. This will help semolina and oats swell and absorb the moisture.
  • After 30 mins, add baking powder and baking soda to the dough. Pour vinegar over it and mix with hands.
  • If the dough feels too hard, add 1- 2 tsp or water.
  • Add chopped nuts and mix.
  • Pour in a greased loaf pan or baking bowl and bake in a preheated oven at 170 degrees for 20-25 mins. Keep an eye on your semolina cake. 
  • Once the cake is ready, remove it from the oven and allow it to cool down.
  • We will be slicing it once it is completely cooled.
  • Cut it into slices and bake the cake pieces for 10-12 mins at 170 degrees.
  • Then change sides of the slices and bake them again for 10 mts or little longer at the same temperature.
  • Allow the eggless biscottis with semolina cake to cool down before munching on these double baked beauties.
