Well, I am going to introduce you to my next healthy bread experiment, which is gluten free, nut free, vegetarian, and egg free.
Perhaps all of my recipes are eggless.

 A common ingredient in north Indian homes, protein-rich red lentils or malika masur dal is all you need to bake a gluten-free breakfast bread. It is just perfect as a vegetarian sandwich bread as well.

Did I say it makes an amazing gluten-free dahi vada? I soaked the leftover gluten-free bread discs in water and hen dropped them to curd. The baked dahi vada tasted simply out of the world.

Egg-free flatbread Ingredients

1 cup- red lentils
2 pinches- baking soda
1/8th tsp rock salt (more or less depending on your choice)
1 tsp- olive oil (or any vegetable oil)
Toppings and veggies of your choice - I had nothing but spring onions, green peas, and turnip
2 tbsp- Hung curd (here's how to make hung curd quickly) - for a vegan version, try adding vegan cream cheese or almond cream mixed with lemon juice for the sourness or add 1 flax egg (1 tbsp flaxmeal+3 tbsp warm water--set aside for 10 minutes)
1/2 cup- water (enough to make batter)
cumin seeds, coriander leaves or herbs of your liking
2 pinches-Black pepper
sesame seeds
apple cider vinegar/normal vinegar/lime juice- a few drops

How to make the red lentil flatbread yeast free

  1. Soak masur dal for 2-3 hours. or up to 6 hours
  2. Pulse it.
  3. Add water and grind to make the batter.
  4. Allow it to sit on the countertop for 1-hour minimum. 
  5. Preheat oven/microwave convection/otg or airfryer to 170 degrees for 10 mts (preheat airfryer for 5 minutes). I baked in my airfryer and preheated the machine for 5 mins.
  6. Prepare the batter and toppings.
  7. Add rock salt to the batter and spices of your choice. Just before baking, add baking soda and a few drops of vinegar. Mix in one direction.
  8. Prepare toppings. I chopped spring onion, grated 1 turnip, and added green peas. Pour hung curd or Greek Yogurt over the batter and mix with sea salt, black pepper. Add little olive oil as well. Mix well.
  9. Grease a pan with 1 tsp olive oil. Sprinkle sesame seeds all over it.
  10. Pour the batter into a greased baking pan.
  11. Sprinkle the toppings over it evenly.
  12. Bake/airfry red lentil flatbread for about 20-25mts at 170 degrees or until it looks baked.
  13. It took my flatbread 25 mts.
  14. Allow the yeast-free flatbread to cool down before slicing it.
  15. Enjoy with chutney of your choice. I dipped the mini pizza discs in coriander-coconut chutney and they tasted heavenly.
