This page is all about airfryer recpes Indian and fusion. These days there is nothing limited to one region. In fact, this holds truer for the cuisine. Despite being a Punjabi, I love all foods Odia, Bengali, south Indian, and what not! So let's talk a little about airfryer recipes Indian and fusion recipes in airfryer.

I was a novice in baking when I purchased my microwave convection. I had never heard of airfryer then. But two years into baking in convection, I decided to go for an airfryer, especially seeing Anita Chahal aunty come up with culinary marvels in airfryer. I decided to invest in Prestige airfryer. It has been the best investment thus far. I have never looked back at my microwave. It's sitting permanently in a corner.
semolina cake in airfryer: My first successful experiment

I started with pakodas in airfryer the day I bought it and failed miserably. The magic of airfryer did not work for me. Then my next experiment was with a semolina cake in airfryer. I literally had my heart in my mouth when the cake was baking in the airfryer, but it was a huge hit with my family.

The result was simply outstanding. I got the confidence to make the most of my airfryer hereafter. Next was the turn of cookies. Well, I had to try out cookies in airfryer, for these baked goodies are the favorite this side. Hubby is not fond of biscuits, but my cookie experiments with healthy flours and ingredients have given him the confidence to enjoy a cookie or two. Odias aren't too fond of cookies, I guess!

So in this video from the Odia cuisine, I present to you Odisha special Pakhala - the ancient Odia tradition of fermenting rice. Now coming back to making Pakhala at home. I dedicate this video to my mother-in-law, who has taught me some simple ways to ferment rice with and without curd.  The idea is to cook rice in water, primarily you will need to boil rice in a lot of water. Drain off excess water and let the rice come to room temperature. Then mix it with curd, salt, and water and store in an earthen clay pot. Since we want to ferment rice, the idea is to leave it overnight at room temperature - ideally in a cool location, which is not too hot.  By next morning, the rice should have fermented - teeming with colonies of healthy bacteria. If you use brown rice...
