The secret to this simple cookie recipe lies in its beauty. Unravel a unique cookie-cracker recipe and indulge in these baked goodies guilt free, for these use not a single drop of oil or butter.

Did I say these are yummy and healthy if you are on diet?

This batch of whole wheat cookies butterless are unlike typical biscuits but these are certainly good to go for those willing to indulge in oil-free, guilt-free cookies.
This almond cookies recipe is for those who want to avoid the use of butter/ghee/oil or limit the quantity of fat. I did not add a drop of oil to the recipe, so they turned out hard. So I suggest adding little ghee/malai to the recipe to make your cookies soft from inside and crispy from outside.
These cookies taste awesome with the fennel aroma and goodness of almond milk. Despite their hardness, my hubby, who rarely eats cookies, loved them.

I didn't add baking powder, but have included it in the recipe for anyone that wishes to try. This may help make your cookies softer :)


Ingredients for Eggless Butterless Cookies with Whole Wheat: 

3/4 cup regular wheat flour
1/2 cup almond meal (I make it at home)
Sugar (depends on taste)
a pinch salt 
1 tsp baking powder or baking soda if you want it more like crackers
3/4 tsp dry roasted fennel seeds (you can add more or less depending on flavor preference)
1/2 cup almond milk (home made)

How to make simple cookies with whole wheat:

Let's make almond meal first.
Soak 1/2 cup almond in hot water for 5-8 minutes.
It will make it easier to remove their skin.
Then dry the almonds on burner in a kadhai. No need to add any oil. When almonds have dried, let them cool down.
Then you can grind them into dry powder. This way you will get almond meal.

  • Then take 1/4 cup of almond meal and add less than 1/4 cup of water to it. Grind almond meal and water. 
  • This way you will get almond milk. I added saunf (fennel seeds) and sugar along with almond meal.
  •  If you want to use butter/ghee, you can reduce the quantity of almond milk and add butter when grinding almond meal with water.
This will ensure that everything mixes well. Keep aside.
Take wheat flour. Add salt. Now add almond meal. Add almond milk little by little and make a soft dough.
Bake at 180 degrees for 15 minutes. It may take longer, so just keep watching closely.
Then once baked, take out the cookies on a stand and let them cool. Enjoy with a cup of hot tea.
