Peepe wale biscuit is one such memory. When I used to visit my maternal grandfather during school vacation, he would bring tins of Punjabi ghee atta ke biscuit. Peepe wale biscuits recipe uses ghee, whole wheat flour, and sugar. Biscuits were our only snack during those days. Back then, there were no pizza, burger for kids to relish. We used to enjoy biscuits as snack along with homemade pakora made by nana ji. I still remember that distinctive taste and flavor of that ghee atta biscuit.
There was a flavor punch that I always use in my homemade cookies. You will know about that flavor punch in the video. There are three main ingredients in the recipe - including ghee, whole wheat flour, and jaggery.
I do not buy refined sugar. I have shown how to make cookies in kadahi without oven and in air fryer.
Homemade cookie ingredients
1 cup 240 ml
1/2 cup whole wheat flour
1/2 cup minus 2 tbsp jaggery powder
1/4 cup ghee
1/2 tsp black cardamom powder
1 tbsp milk
How to make Punjabi biscuits at home
Start with mixing 1/4 cup ghee with 1/2 tsp of black cardamom powder. Mix and refrigerate for 1 hour.
Start whisking the ghee with 1/2 cup jaggery after 1 hour. The idea is to whip until you get a creamy, fluffy consistency. I have taken 1/2 cup minus 2 tbsp jaggery as I do not like overly sweet biscuits. Add 1 tbsp of milk and cream again until light and creamy.
Now add 1/2 cup whole wheat flour in batches. Do not dump it all at once. The reason is that all flours are different in quality. Some have more fiber, others less. The one with more fiber will need more moisture. In that case, you will need to add less flour. Make a log shape and keep in fridge for 10 minutes. Do not keep longer as the cookie dough might become hard and it would be difficult to shape it. To give Punjabi ghee biscuits the shape of peepe wale cookies, I have used a potato slicer. Preheat airfryer to 160 deg c for 5 minutes. Cut biscuit shapes and sprinkle a dash of black cardamom powder on top.
Bake whole wheat flour cookies at 160 degree celsius for 10-12 minutes. Check, if done. Else, bake a little longer,
If you want to bake cookies in kadahi, add salt to the cooker or kadahi , place a stand and preheat it for 10 minutes. Then place the baking tray greased with oil/ghee and dusted with flour. Place cookies for baking. Cover with a tray. Bake on a low flame. Check after 5 minutes. Try to shake the cookies a little so that they do not burn from the bottom. Kadahi cookies bake quickly. If the atta biscuits look browned from bottom, let them cool and grate the bottom with a grater. You can easily remove the burnt part and enjoy healthy cookies at home.
