Kitchen King Masala Powder Recipe Alternative [No onion garlic all- purpose masala ]

I rarely buy readymade masala powders ever since I started following my mother in law's all- purpose curry powder recipe. It is ALL-ROUNDER, as my MIL uses this masala to flavor all her curries, stir fries, and vrat thalis in Odisha. Now it has become my favorite curry powder too. If you are crazy for Indian spices, then quit store-bought flavors because this is THE BEST curry powder recipe ever. I am sure you won't find a MATCH elsewhere.

no onion no garlic kitchen king masala recipe ingredients

1 cup- coriander seeds

2 tbsp fennel 

1.5 tbsp- jeera

1 tbsp- shah jeera

2 small cinnamon sticks

a few javitri/mace

8-10 cloves

8-10 black peppercorns

8 green cardamom

4 big cardamom

1 tbsp- turmeric powder

1 tbsp- kashmiri red chili powder

1 tbsp salt

1 tbsp kasuri mehti

1 tsp- mustard seeds

1 tsp- methi dana/fenugreek seeds 

red chilli whole





My search for the best curry powder ends here. I have been struggling to find one since my return from Odisha. Here's the ONLY one curry masala that you need to flavor your curries. Kuch bhi- take my words for it. This recipe takes inspiration from MIL's Odia curry powder recipe.

Chalo, without wasting time, let's get into the recipe to make our own Kitchen King substitute, which is way better than the store-bought stuff.

We all stock coriander seeds in our homes. I bought a lot of it from the hills of Uttarakhand because I use coriander a lot.

So the star of all masalas remains coriander. You need 1 cup of it.

Let's add all other masalas before roasting them for a couple of minutes.

You ll also need red chili whole, 2 tbsp of fennel seeds or saunf, 1.5 tbsp jeera/cumin seeds, 1tsp mustard seeds, 1/8 tsp nutmeg, 3 black cardamom, 10vgreen cardamom, few javitri threads, 8 lavang/ cloves, 1/2 tsp black peppercorns, 1 medium cinnamon stick/dalchini, 2-3 bay leaves, 

Let's dry roast whole spices for 2 min @200 deg c in aurfryer. you may do so in kadahi too. don't roast for more than 2-3 min in kadahi. 

Chalo ji, now it's time to pulse roasted spices to powder along with 1 tbsp turmeric, 1 tbsp kashmiri red chili powder 1 tbsp salt, sift the masala powder. 

Pulse the grits along with 1 tbsp roasted kasuri methi, 1 tbsp roasted methi dana and 1 tbsp shah jeera. now you are just 1 step away from making the most flavorful curry powder masala at home. sift the powder and grind it again until you get fine powder that passes through the sieve. congratulations, you have just made your own kitchen king substitute that can flavor your curries and stir fries. don't blame ravneet bhala if you get addicted to this stuff. ab ek like to banti hai na. take care until we meet next with yet another healthy recipe.
