95% will say tofu making is tough (I say red lentils tofu is easy to make at home)

 you won't believe how easy tofu making is until you do it yourself.

If you are looking for protein-rich tofu, making one with red lentils is a good idea. The tofu stays good in the fridge for 3-4 days and in the freezer for days together.  So let's begin making red lentil tofu. In India, red lentil is lal masur ki dal.

A little about red lentils


Red lentils or masoor dal are one of the weight loss favorites that can be added to any weight loss diet for their nutritional benefits. There's a lot of dietary fiber and protein in masoor dal, which facilitates excess fat and weight loss, and proper bowel movement.

Let's begin making tofu with red lentils 

ingredients
1 cup- red lentils 1.5 cups of water for cooking sesame salt, pumpkin salt, rosemary, turmeric (you may replace with normal salt) for cooking tofu in airfryer 1 tbsp- olive oil or little more pumpkin salt rosemary


soak 1 cup of red lentils overnight after rinsing it well.
soaking of lentils helps reduce phytates and anti-nutrients from legumes. 
now after the lentils have soaked well overnight, the next step is to rinse them once and blend the lentils with 1 cup of water. I do not prefer adding too much water to tofu as it tends to become quite loose and takes longer to cook. you may add up to 1.5 cups of water in total.
Blend along with salt and spices of choice. I have thrown in a few dried sprigs of rosemary, black pepper powder, pumpkin salt. 
Now let's start cooking the batter on a low flame until it turns gooey and thick paste like.
It will start to leave the sides of the pan when you run your spatula through the cooking batter.
When it reaches thick consistency, turn off the flame and pour into a container.
Let red lentil tofu cool down before popping it into the refrigerator.
You can cut it into pieces after an hour or longer (of course, after it looks set properly).
By the next day, the tofu might leave excess water on its own in the fridge. That's okay. It will be crispier upon frying in an airfryer.
I chose to fry red lentil tofu in air fryer after marinating the pieces with 1 tbsp of oil, sesame salt, and extra sprigs of rosemary. You may choose marination spice mix of choice. Let marinated tofu sit in the fridge for 30 minutes.

air fry tofu nuggets at 160 deg c for 20-25 min (longer if you want crispy chunks).
Enjoy garama garam with a quick sauce mix, which is a yum treat in itself. Ask me for the recipe. it will come in handy any time and pair well with pakodas and samosas. lal masur dal tofu nuggets make a party snack as well when paired with my secret 3-ingredient sauce.
