Soft and Puffy Millet Chapati Recipe for Gluten-Free Diets

This recipe outlines the process for creating soft and puffed millet chapatis, ideal for those following a gluten-free diet. Ingredients: * 1 cup millet flour (kangni atta) * ½ cup + 2 tablespoons water (adjust as needed) * Ghee (clarified butter) * Salt (optional)

Instructions

1. Homemade Millet Flour (Optional): For optimal freshness and control over ingredients, the recipe suggests grinding your own millet flour. Recipe already up on channel 2. Boil Water:Bring ½ cup water + 2 tablespoons water to a boil in a saucepan. 3. Cook Millet Flour: Gradually add 1 cup of millet flour to the boiling water, stirring continuously to prevent lumps. The mixture will resemble wet sediment, which is the desired consistency. 4. Rest the Dough: Turn off the heat and let the crumbly mixture rest for 10 minutes. 5. Knead the Dough: Wet your hands and begin kneading the dough. Add 1-2 tablespoons of additional water if necessary to achieve a soft consistency. Cover the dough and allow it to rest for 30 minutes. (Alternatively, you can proceed immediately if using store-bought millet flour.) 6. Roll and Shape the Chapati: Pinch off a small ball of dough, flatten it gently with a rolling pin. If achieving a perfectly round shape is challenging, use a round bowl as a guide. Trim off any excess dough to create a uniform circle. 7. Cook the Chapati: Heat a skillet or tawa over low heat. Place the rolled-out chapati on the hot surface. Cook for 30 seconds on low heat. 8. Puff the Chapati: Flip the chapati and increase the heat to high. After another 30 seconds, flip the chapati again. Ideally, the chapati should puff up on its own at this point. 9. Optional Pressing: If the chapati doesn't puff naturally, use a roti press to gently press down on all sides, creating a puffed appearance. 10. Finishing Touches" Spread ghee on the cooked chapati and place it in a casserole dish. This will help retain moisture and keep the chapatis soft for several hours. 11. Serve and Enjoy: Millet chapatis pair well with curries, stir-fries, or other flavorful dishes.
