Millet Sweet Treat: A Healthy and Delicious Dessert
Millets are the latest craze in the superfood world. They are gluten free and packed with nutrition. Millets are versatile enough to be used in savories, meals and sweets.

Ingredients:

4 cup millets (soaked overnight)
¼ cup cashews (soaked separately)
Green cardamom pods (to taste)
Water (as needed)
2 cups water for boiling
Jaggery (or preferred sweetener)
8-10 cup makhana (roasted fox nuts), coarsely ground
¼ cup almonds, coarsely ground

Instructions:

Soak the millets overnight and the cashews in separate bowls.
Blend the soaked millets, cashews, and green cardamoms with a minimal amount of water to create a smooth batter.
Boil water in a separate vessel.
Simmer: Once boiling, gently add the millet batter to the boiling water, stirring constantly to prevent sticking.
Sweeten: As the mixture thickens, add your chosen sweetener (jaggery suggested).
Cool: Once thickened, remove from heat and allow the millet halwa to cool completely.
Assemble: Grind the makhana and almonds together coarsely.
Layer: In a serving dish, alternate layers of crushed makhana and almond mixture with the cooled millet halwa, creating 4 layers.
Refrigerate: Cover and refrigerate for a chilled dessert.
Serve: Cut into desired shapes and enjoy!
