Eggless Millet Jaggery Biscuits in Airfryer| No Baking Powder, Soda [Handmade Sattu Cookies]

Eggless baking is what you love but you also want to relish healthy cookies with protein, fiber, and minerals. You love cookies but do not want to eat maida biscuits that are laden with artificial preservatives, refined sugar, additives, colors, and chemicals. So here's presenting a very healthy cookie recipe with malai and jaggery. As always, Ravneet Bhalla bakes no maida, no sugar biscuits without baking powder and soda.

Here's my collection of healthy wholesome biscuits without baking powder or soda.


So let's see what the millet cookie recipe is.

For the ingredient list, 
1 cup= 240 ml
1/2 cup jaggery powder
1/4 cup- homemade malai (cream)
1/4 cup- homemade sattu powder
1/4 cup-homemade little millet flour 
1/4 cup+2 tbsp- homemade besan 
1/2 cup- almond flour (homemade)
2 pinches of flavor of choice ( I have used homemade allspice powder)



How to make sattu cookies at home



You need 4 tbsp of refrigerated malai or cream. Mix with 1/2 cup of jaggery powder. Please check cookie baking basics for beginners for all basic steps.



Stir well until it looks mixed. Add 1/4 cup of sattu or roasted chana powder. Mix.


Now add the flavor of choice. I have used homemade allspice powder. You may make these cookies chocolaty with the addition of 1 tbsp of cocoa powder.
Add 1/4 cup+2 tbsp of besan or chickpea flour. Remember, these are power-packed high-protein cookies without baking powder and soda. SO follow all steps in the video recipe.


Next goes in 1/4 cup of homemade little millet flour.



You may replace little millet with any other millet powder.
Add 1/2 cup of almond powder to make nutritious cookies for kids.


Gather into dough. It has got to be a soft dough as all of my healthy biscuits without raising agents.
Cut into shapes. Make the design of choice. I chose to make the healthy cookies look beautiful with a flower pattern with hands.
Follow the steps shown in the video to learn how to design a flower cookie without any cookie cutter.
Preheat airfryer to 160 degree celsius for 5 minutes. You may bake these millet cookies in oven, otg, convection or even on stovetop.

Place each cookie at a distance from the other.
Bake protein cookies with sattu at 160 deg c for 14-18 minutes. Timing might vary from one machine to another. It might take your sattu cookies longer to bake in an otg or oven. If you try out this cookies recipe in oven or otg, please share how long it takes to bake. 
Allow cookies to cool down before storing them in an airtght container.
