Nutrient-Packed Nut and Fig Energy Bars

Introduction

In today's fast-paced world, the demand for convenient and nutritious snacks is on the rise. This recipe offers a delicious and wholesome alternative to store-bought energy bars. Packed with nuts, figs, and dates, these homemade treats provide a substantial boost of energy and essential nutrients.



Ingredients:

1/2 cup Dried figs 1/2 cup Dried dates 1/4 cup Raisins 1 cup Almonds 1/2 cup-Pistachios 1/4 cup Walnuts 1/2 cup Cashews 1/2 cup desiccated coconut 1 tbsp-Beetroot powder (optional) 3 tbsp Ghee (or coconut oil)

Instructions:

  1. Preparation:

    • Soak dried figs, raisins and dates in filtered water for 3-4 hours to soften.
    • Soak almonds separately in filtered water for the same duration.
  2. Blending:

    • Drain the soaked figs, raisins and dates, reserving the soaking water for other uses.
    • Blend the softened figs, raisins dates, and almonds into a smooth paste.
    • Add the soaked almonds (without water) to the mixture and blend until well combined.
  3. Cooking:

    • Transfer the blended mixture to a pan.
    • Cook on low heat, stirring continuously, until the mixture thickens and starts to leave the sides of the pan.
    • Add powdered pistachios, walnuts, and cashews. Mix well.
    • Optionally, add beetroot powder for color and additional nutrients.
    • Incorporate ghee or coconut oil gradually, stirring constantly until the mixture comes together.
  4. Shaping and Cooling:

    • Transfer the mixture to a lined baking tray or a container.
    • Press the mixture evenly to form a desired shape.
    • Refrigerate until firm.
  5. Storage:

    • Store the energy bars in an airtight container in the refrigerator for optimal freshness. It stays good for 7-10 days, if not longer, in the refrigerator.
