How to Ferment Gooseberries in Honey 


Here's a straightforward way to ferment gooseberries using honey: 
ingredients
Ripe gooseberries 
 Honey 
A clean, sterilized glass jar 
Hot water to rinse amla and soak for 10 minutes( this makes chopping easier and gets rid of impurities)


How to make amla honey candy?

 Prepare the Gooseberries
Rinse the gooseberries well and dry them with a cloth. 
Soak in hot water for 10 minutes and pat dry. 
Cut them into smaller pieces, discarding the seeds.
Fill a sterilized glass with amla and then top with honey, leaving neck space. 
Seal and Store:
Secure the jar loosely and place it in the sunlight for a week. 
Shake the jar daily using a spoon to make sure everything remains below the liquid. 
Remember, amla starts releasing juices and the honey will turn liquidy. 
This is perfectly fine. Fermentation is on. 
The honey will naturally preserve the gooseberries and initiate a gradual fermentation process, which can take several weeks or even months. 
Keep amla in sunlight for a week. Shaking the container daily with a spoon.
After a week, shift amla to room temperature but do not forget to stir it until gooseberries drown themselves. 
You need to stir only until the time amla floats.

Choose Quality Honey:
Honey serves as a natural preservative, so opt for pure, unprocessed honey. 
Sterilize the Jars
Make sure to sterilize both the jar and lid to avoid any contamination. 
Regular Checks
Stir everyday and check the jar for signs of mold or spoilage. If you see anything unusual, discard the contents. 
Be Patient:
Fermentation is a slow process. Give it time to allow the flavors to mature.
