How I Learnt To Make Sourdough Less Sour? Can I make sourdough taste less sour?

  When I first began my sourdough journey, I also had my share of sour bread. Some loaves tasted stronger than my family preferred. At first, I thought sourdough simply meant sour bread. But I was not prepared for it. Sour bread is unwelcome any day in my home. I cannot even stand the smell of sour bread. So whatever recipes I share are absolutely sourless because we don't eat sour bread. Sourdough can be strong and tangy. But it can also be mild, soft and almost sourless when we learn how to guide the fermentation. One of my most useful experiments was using milk or dairy in the dough. In my kitchen, breads made with milk often tasted much milder than breads made only with water. The reason is simple. Milk adds natural sweetness, fat, proteins and minerals.   A comment I got recently is one I know a lot of home bakers are quietly wondering about: if you dry your starter into a powder, does it still give you the same benefits as a fresh, actively fed sourdough culture?
