Whole Wheat Crackers With Sesame Seeds

Do you love crackers? What if you get to relish whole wheat crackers that too home made. With the goodness of sesame seeds (til), wheat crackers are an instant hit at my home. I have recently returned from my parental home. Got this idea of using sesame seeds from a bakery - dad brought crackers from a local bakery. I was itching to give them a try. Of course, the bakery crackers use maida, but this recipe is a no maida recipe. You know it all about me now!

Whole wheat flour is a healthier alternative to plain/refined flour, which takes longer to digest, has no nutritional value, and contributes to blood sugar spike. Contrarily, whole wheat flour has more nutritional value. You will not find any recipe that uses maida in this blog. Yes, I did use maida once for a cake rusk recipe.

Let's get back to the wheat crackers recipe. Now you must be wondering why I have added sesame seeds? Well, sesame seeds are a widely popular condiment in India. Their nutty taste and crunch makes them distinct. An excellent source of copper, magnesium, manganese, iron, calcium, zinc, phosphorus, selenium, and molybdenum, sesame seeds are great for joints.


Since they are a rich source of copper, sesame seeds are known to help rheumatoid arthritis patients manage their symptoms. Calcium in sesame seeds helps protect colon cells, preventing colon cancer, osteoarthritis, PMS, and even migraine. Zinc in sesame improves bone mineral density and boosts bone health.

What is the best time to bake a fresh batch of wheat crackers with the nutty flavor of sesame seeds?

When unexpected guests come calling and you are wondering what to serve them… when you wish to munch on crunchy something at snack time… when you’re planning a short trip and wondering what to carry along - something that won't spoil !

Nothing better than this batch of freshly baked atta crackers!

Coming back to the recipe, you will be surprised to know it does not use baking soda or powder. This is the reason we call them crackers - not as soft as cookies, but not too hard not to be broken with teeth.

Yes, this recipe is a keeper - easy to churn out with ingredients on the shelf.

Ingredients
1 cup- atta (whole wheat flour)
4 tsp- olive oil (you may use any other vegetable oil or even ghee/clarified butter) - you may even use oil from pickles for a tangy twist
1/2 cup- roasted sesame seeds
1/2 tsp- sugar powder
1/2 tsp- salt (less or more)
2 tbsp- thick curd
2-3 tbsp- water (more or less to knead soft dough, though not too soft)

Procedure

  1. Roast sesame seeds without oil.
  2. Mix atta, sesame seeds, salt,and sugar powder.
  3. Add olive oil. 
  4. Rub oil, curd, and atta together with hands.
  5. Add water 1 tbsp at a time. We need to knead soft, pliable dough. It should not be too soft.
  6. Keep the dough aside for 30 mts.
  7. Preheat oven (mw convection) at 180 degrees for 10 mts.
  8. Roll out the dough like a chapati and cut into pieces of desired shapes.
  9. Use a fork to pierce the dough pieces. This will ensure the pieces bake well from inside.
  10. Bake the atta crackers at 170 degrees for 20 mts. 
  11. Enjoy with a hot cup of tea.
