Now let's start making hummus without chickpeas, sesame seeds, tahini, and garlic.

To begin with, let's roast carrot first. You may try with beetroot as well. I have done both and loved the end result. I choose to roast carrots on tawa or skillet with some amount of salt. I roast potatoes the same way and have learned it from my Odia MIL. Roasting veggies on a tawa is a unique way to cook them. The veggies become so flavorful and cook up beautifully without consuming a lot of oil.

Roast on a low flame and cover. Flip twice or thrice after a few minutes. This should take 15-20 mins. If you want, you may add a little amount of oil to roast the veggies quickly. Let the roasted carrot cool down before blending it with sprouted mung beans.

Blend together roasted carrot, mung sprouts, lime juice, black salt, and thick curd. A hint of lemon combines with the subtle sweetness of carrot to create a bowl of goodness that nobody can say no to. Enjoy with crackers, nachos, papad, pakodas or even rice ( like i do).
