How to make soft paneer at home

The pasterurized milk that I use has 4% fat and gives me soft, delicious paneer cubes.

Boil 1 liter of milk. Stir in 1 tbsp of apple cider vinegar or lemon juice or 2 tbsp of curd.

Keep stirring. If the milk still does not curdle fully, which often is the case with psteruized milk, add 1 tbsp more of vinegar or lime juice and 2 more tbsp of curd (but add 1 tbsp at a time)

The milk should curdle easily. Once the chenna separates from the milky water, known as whey, it's time to strain it using a cotton cloth, just like my nani used to do.

Rinse the homemade paneer with cold water to remove any smell of vinegar. If you make chenna with curd, you may or may not wash it. 

Immediately press the chenna under heavy weight so that any excess moisture is released.  

After an hour, you may shift it to the fridge and remove any whey that separates from paneer after pressing it under weight.
