How to make jowar bafla bati and churma

Dal Bati Churma is widely loved in North India, and today Ravneet Bhalla is sharing a gluten-free version made with jowar flour. This is a Jowar Bafla Bati recipe made in an air fryer, along with a simple gluten-free churma. For the jowar bafla bati, boil 3 tablespoons of water. Add 1 tablespoon of ghee and a little salt. Now add ½ cup jowar atta, also known as sorghum flour, and mix well. Turn off the flame. At this stage, you can add ajwain or carom seeds if you like. This is optional. Now knead everything into a dough. Add a little more water only if needed, but add it slowly. The dough should not be very soft. Keep it medium-firm. Cover and rest the dough for 30 minutes. After resting, make small balls from the dough. Press each ball gently with a fork to make a criss-cross mark. Now let’s prepare the gluten-free churma. Take ½ cup jowar flour and ½ cup besan. Boil 3 tablespoons of water with 2 tablespoons of ghee. Once it comes to a boil, add the jowar and besan mixture. Mix well and turn off the flame. Remove it from the pan and make small balls or any shape you are able to make. Keep them aside. Now we will boil the bafla bati. Fill a pan with water and bring it to a boil. Add the bati balls into the boiling water. Cover and let them boil for 10 to 15 minutes, or until they start floating on top. Once boiled, remove them and let them rest for 10 minutes. Now place the boiled bati balls in a preheated air fryer and bake at 160°C for 35 to 40 minutes. Bake the churma balls the same way at 160°C for 35 to 40 minutes. If you are using an oven, OTG or convection, it may take a little longer, so check and bake more if needed. Once the bafla bati is ready, serve it with dal. I enjoyed mine with no onion, no garlic dal made in Gurdwara style. For the churma, take the baked churma balls and pulse them into a coarse powder. Add roasted nuts of your choice and ¼ cup jaggery, or more as per your taste. Pulse again. Garnish with more nuts and raisins. This gluten-free churma feels more like a healthy jowar-besan panjiri, and it goes beautifully with the jowar bafla bati. I hope you liked this gluten-free Jowar Bafla Bati in Air Fryer recipe. Is Fermented Rice Healthy? How Do You Ferment Rice [Odisha's Pakhala Bhaat Recipe]

What is the meaning Pakhala bhaat? Is Pakhala good for health? Is fermented rice healthy?  Or in other words, does curd rice have b12? These are some of the questions that have been asked every now and then. So in this video from the Odia cuisine, I present to you Odisha special Pakhala - the ancient Odia tradition of fermenting rice. Now coming back to making Pakhala at home. I dedicate this video to my mother-in-law, who has taught me some simple ways to ferment rice with and without curd.  The idea is to cook rice in water, primarily you will need to boil rice in a lot of water. Drain off excess water and let the rice come to room temperature. Then mix it with curd, salt, and water and store in an earthen clay pot. Since we want to ferment rice, the idea is to leave it overnight at room temperature - ideally in a cool location, which is not too hot.  By next morning, the rice should have fermented - teeming with colonies of healthy bacteria. If you use brown rice...
