Yeast-Free Whole Wheat Bread Buns: How To Make A No Yeast Bread, Atta Pav Bun Recipe in Airfryer


Wondering how to make yeast-free whole wheat bread buns? Call these sweet bread buns or yeast-free atta paav, this recipe is a keeper for those looking for a yeast alternative for baking. Well, personally, I tend to avoid the use of baking powder and soda in most of recipes, but as of now, this yeast-free recipe gets its perfect sponge and shape from these two leaveners. Let's try out this yeast-free atta paav unless we get to a point where we can make these without raising agents. The challenge is tough, but not impossible. The feat looks tough, but culinary experiments can lead to any direction. I can't say it quits unless I get one yeast-free recipe without raising agents too. Fingers crossed. Anyway, so coming back to the no yeast atta paav recipe, I got a request in this regard a few days back. So decided to take a plunge into making yeast-free buns. Did the recipe disappoint?

Well, if you are used to enjoying market food, then this yeast-free recipe may not be for you.
If you are used to relishing maida buns that use yeast, then this atta paav may not please you.
If you have health on your mind, then you can go ahead with the no yeast paav bun with atta.
Ask me, and I would choose whole wheat flour over maida for any recipe.

Yeast, in general, is not bad for everyone unless you have a yeast allergy, histamine intolerance, are a Jain, or have a stomach disorder. Some people with celiac disease can avoid yeast too, besides gluten.

Ingredients
1 cup measures=175 ml
2 cups- whole wheat flour
2 tbsp- dehydrated milk powder (I use infant formula)
2 tbsp- oil
1 tbsp- jaggery powder/sugar
1 tomato (I just added for the sake of it)
1/4 tsp- black salt/rock salt/mineral salt
1/2 cup- curd
1 tsp- baking powder
1/2 tsp- baking soda
1/2 cup- water/milk at room temperature (more or less depending on the dough)
2 tbsp- roasted flax meal (powdered and roasted flax/alsi - this is a substitute for egg)- or you may use 1 boiled potato/sweet potato

How to make yeast-free bread Paav with whole wheat flour


Let's make a no yeast bread with whole wheat/atta.

Sift whole wheat flour, dehydrated milk powder with baking powder and baking soda two-three times.
Keep aside.
Add curd and flax meal to a processor/mixer jar.
Add salt, jaggery, oil, and chopped tomato.
Blitz the processor until everything looks well combined. This mixture should be 1 cup. Measure it at this moment. Add more curd if it is less.
Remove this wet mix in a wide bowl.
Slowly drop atta into the curd-tomato bowl.
Use your hands to fold in one direction. Mix gently until everything looks incorporated.
Add water little by little if the mix looks dry. We want a sticky dough - slightly thicker than cake batter - similar to cake rusk dough.
Cover with a wet/muslin cloth for 10 mts.
Preheat oven/convection/airfryer to 180 degrees for 10 mts. Airfryer can be preheated for 5 mts only.
Use your wet hands to work with the paav dough, which should look slightly risen by now.
Try to work with it until it retains the shape of a sticky dough.
Rub oil on your hands and make small balls. Place each ball in a greased and dusted baking pan. Dust the pan with dry flour and then place each ball.
You can top each ball with sesame seeds - black or white.
Bake/airfry for 25-30 mts at 180 degrees.
Remove from the oven once done.
Cover with another wet cloth for 30 minutes.
Allow the paav to cool down under the wet cloth. This will help retain soft texture.
Enjoy yeast-free paav with whatever you wish to.
Mom enjoyed it as is. Dad had it with tea, saying these were like sweet bread buns.
I relished it with homemade amla jam.
PS: The atta paav without yeast will surely be a little different from maida yeast paav.

    1. Thank you for stopping by. You may add up to 2-3 tbsp of honey or 1/4 cup jaggery powder for sweeter yeast-free buns.

  4. Tried the same recipe with maida but without Yeast , the buns turned out to be very very hard, what improvements can I do?

    1. Well, if you are expecting these buns to be like the yeast paav, then you won;t get the same results dear. However, you can try to loosen the dough by increasing the amount of liquid...or substitute liquid with curd/buttermilk..increase the amount of baking powder to 1 tsp
