Celiac Disease and Gluten Intolerance

People with celiac disease are not able to tolerate gluten. Even a slice of a gluten cake or cookie can trigger symptoms of celiac disease – a condition in which there is an immune response to gluten ingestion that causes damage to the intestinal lining. As a result, nutrients in the food are not easily absorbed, causing a host of health issues, including seizures, infertility, neurological problems, and osteoporosis.


Celiac disease is diagnosed with a blood test to confirm the presence of antibodies against protein - tissue transglutaminase. The diagnosis is confirmed following a biopsy of the intestine. It is caused by the body’s abnormal autoimmune response to gluten, which can damage the gastrointestinal (GI) tract lining, resulting in severe skin rashes, anemia, diarrhea, and bone pain. In some cases, celiac disease may lead to intestinal cancer, if not treated on time.

So you should be looking for gluten-free recipes. If you love baked goodies, then you ought to try out gluten-free bakes, including cookies, cakes, savories, and crackers.

gluten-free almond cookies

Ingredients
4 tbsp- Homemade sprouted ragi powder (finger millet - if you do not have sprouted flour, you may use plain ragi atta)
1/4 cup+2 tbsp- almond meal (here is the recipe to make almond meal at home)
2 tbsp- ghee / butter
1 tsp- milk (hot)
1/4 tsp- coffee powder
3 tbsp- jaggery powder
salt- pinch
2 pinches of b.soda.
1 tbsp- cocoa powder

How to make Gluten-Free Cookies With Ragi, Almond  Meal


Make a decoction with coffee powder. Add coffee to hot milk. I am not a coffee person, but I am starting to like the flavor in my cookies. But this hardly gives a coffee flavor. Add b.soda to hot coffee decoction. Give it a good mix.
Next, add jaggery powder to the decoction and whisk well. It will become frothy.
Now add ghee and whisk very well until everything looks well mixed.
Add salt, cocoa powder, and sprouted ragi flour. Mix with spatula or hands.
Add almond meal and fold everything.
Do not knead. Here we are not using any gluten ingredients so kneading will not result in gluten formation in this simple cookie recipe.
But I still prefer not to knead my cookie dough.
Preheat the oven/convection/airfryer to 170 degrees for 10 mts (airfryer for 5 mts).
Mix and take small lime-sized balls. Make sure these are really small.
Flatten with your palm or fork and place on a baking tray/sheet/airfryer basket.
Bake/airfry at 170 degrees for 15 mts.
Keep an eye on your gluten-free cookies. If they look little soft after 15 mts, you may bake these for 2 minutes more.
Remove on a cooling rack and let the cookies cool down before storing in an airtight container.
