A Peep Into the Benefits of Jowar/Sorghum

The ancient grain is a rich source of fiber, so it is a great constipation aid and helps in digestion.
A rich source of calcium, magnesium, and copper, jowar or sorghum is gluten-free and thus an ideal grain for those with celiac disease or gluten sensitivity issues.
A good source of protein, jowar benefits health in more ways than one - being a complex carbohydrate, jowar aids in digestion, has cholesterol-lowering properties, and is being touted as an aid for fighting free radicals, though more research is needed to substantiate this claim.

Ingredients for crispy oatmeal cookies without baking powder, soda, all-purpose flour
2 tbsp of homemade ghee 
3 tbsp- organic extra virgin olive oil (or any other flavorless oil or even ghee/butter)
1/4 cup- organic wheat bran(or you may add 2 tbsp of oats extra-as we are already using oats in the recipe)
1/2 cup- organic jowar/sorghum flour
1/2 cup+1/4 cup- powdered oats
1/2 cup- organic jaggery
2 tbsp seeds or nuts of choice

So we have decided to start a campaign in schools so that healthy eating habits will generate ineterst in children, upon whom depends the future!

It will help us spread the word about healthy eating and take the movement to every home.

So let's come back to the refined sugar free simple cookie recipe:

Add ghee and olive oil to a bowl.
Throw in dry organic jaggery powder. The idea is to sift jaggery powder and add it to the wet ingredients. Remove any grits.
Whisk it until your shoulders start to pain.
This is your secret to making cookies light and fluffy without raising agents. You will be surprised to see how the magic works.
Next once the wet mix looks pale and fluffy, add 1 tbsp of hung curd (check the recipe to make instant hung curd here) or milk.
Whisk again for 1-2 minutes. This step is critically important.
Next start adding dry ingredients one by one.
Add bran first and fold it into the batter.
Then throw in sorghum flour and fold again.
Next comes the turn of oatmeal. I added in batches - mix one part and then add the remaining too.
Fold again.
NEVER EVER KNEAD cookie dough in my recipes.
If you knead, you are playing a different game altogether that will give you chewy bites. I never aim at getting chewy bites in my cookies. I want them light and crunchy.
So please do as directed.
Now fold nuts or seeds of your choice.
Divide the dough into 2 parts - add 1 tbsp of cocoa powder to one part.
Keep the dough covered at room temperature for 10 minutes.
Then preheat your oven/otg/convection or airfryer to 160 degrees for 10 mts. Airfryer can be preheated for only 5 minutes.
Start taking small pea-sized parts from each dough and join the peas - take 2 each from each dough. Connect one part with another - please check the video for clarity - since we are looking for a unique pattern here, so join the cocoa part with the plain part and again the cocoa to plain and form a ball. Press gently with hands. 
Follow for the remaining dough.
Bake/airfry for 20-25 minutes at 160degrees.
Allow the sorghum cookies to cool down and indulge in the goodness of healthy homemade goodies.
