Weight loss blues? Millet salad Indian recipe can come in handy as a hearty breakfast or lunch or snack. We enjoy it as breakfast or accompaniment with rice as salad with chickpeas. There's a lot of craze for millets these days. In fact, millets are the next big thing in the food world. But you might be surprised to know that they were always a part of our ancient Indian culture. These tiny grains are a powerhouse of nutrients, as I always say. This heart millet salad with vegetables is my Buddha bowl. Add cucumber and mangoes to make mango salsa that everyone would fall in love with.

FOXTAIL Millet Salad With Chickpeas

Millets benefit health in more ways than one.
They are loaded with fiber, essential minerals, and proteins .
Since they are rich in dietary fiber, they are an excellent food for your gut. That also means millets are a digestive aid.
Whether you are suffering from cardiovascular disease or are unable to control your blood sugar spikes, millets can be your go-to ingredient as part of a balanced diet.
Did I say millets for weight loss diet are a boon?
Why?
Well, they are deficient in calories. What makes you obese in most cases is an overload of calories. The excess calories tend to deposit in your body as fat. This is what makes you obese.

Foxtail millet is one of my favorites after ragi or finger millet.

Foxtail millet salad recipe is easy to make. You need a handful of healthy ingredients to turn it into a hearty bowl of salad with chickpeas. 

Ingredients


1/4 cup- foxtail millet
1 onion
1 tomato
1/2 cup- water
mint leaves, coriander leaves
black salt
black pepper
1/2 cup- black chickpeas (boiled)
1 lemon
cucumber or fruit of choice can be added
10-12 roasted peanuts

How to make Foxtail millet salad recipe with chickpeas in India

Soak the millets for 2-5 hours. I soaked them in the morning and started with the rest of the process after 4 hours.
Boil with 1/2 cup of water for 4-5 whistles. Make sure they do not get mushy.
Let cool for 5 minutes.
Stir in all ingredients.
Enjoy warm millet salad Indian bowl. 
You can try this out as little millet salad too. By the way, I have made little millet upma for vrat. Do try that out. It's yummy and hearty as a vrat recipe.
Today, I made foxtail millet dosa, which is yummier than the typical dosa we eat.

Boiled lobia (black-eyed beans)
Chopped cucumber, tomatoes, grated carrots..
Dressing..
Homemade peanut butter 1heaped teaspoon
Date paste to taste
Lemon juice
Garlic 1 clove
Ginger small piece
Green chilli
Little water to blend
Salt, pepper to taste..
Method
Mix salad ingredients well.. Add in required amount of dressing..
Mix well..... Enjoy
