Sabudana Kitchdi/Upma

Fasting or not, sabudana kitchdi is loved  by one and all. It's a popular snack that is healthy as well. The tapioca pearls, the English name of sabudana, are full of carbs and thus a good source of energy. Surprisingly, it makes a healthy alternative to carbonated drinks without any sweeteners or artificial chemicals.

While sabudana kitchdi is a breeze to make, it is tasty and healthy. Additionally, it can be enjoyed during fasting days, especially Navratri. Low in fat and protein, sabudana or sago is mixed with high protein and fiber foods for a balanced diet.

Soaking of sago reduces the amount of starch and makes it less sticky.

You may grind sago and then use its starch for thickening gravy.

But of you're looking for sabudana kitchdi recipe with sago shining as pearls, here is my take on this fasting recipe:

Ingredients

1/2 tsp oil/ghee (clarified butter)
1 bowl sabudana (soaked overnight)
1/2 tsp jeera (cumin seeds)
Few curry leaves
1 boiled potato
1 tomato pureed (I did not puree)
Salt as per taste
pinch of sugar
1 green chilly
Roasted almonds

Procedure

  1. Soak sabudana in as much water as required to simply drown it. Do not flood the bowl with water.
  2. In the morning, drain sabudana and keep on a strainer for at least 10 minutes.
  3. Puree tomato.
  4. Take oil in a pan.
  5. Add jeera. Let it splutter.
  6. Add roasted almonds and curry leaves and enjoy the rustic aroma in your kitchen.
  7. Add tomato puree, chilly, and salt & sugar.
  8. Add potato cubed into small pieces. 
  9. Mix well until the masala is fried and coats potato well.
  10. Add sabudana pearls. Mix. Check for salt.
  11. Sprinkle lime juice and enjoy sabudana kitchdi while fasting or not.

Who does not love sweets? Hardly anybody! But yes, exceptions are always there.

If you do not like sweets, it is primarily due to their sugary content, fatty richness, calorie burden, and buttery lusciousness. But trust you me, this almond butter fudge is

  • sugar free
  • butter free
  • fat free
Additionally, it comes loaded with health benefits, for it gives you all the benefits of the nuts involved in its processing.

I prefer almond butter to peanut butter for reasons galore, with the prime one being groundnuts raise the risk of bad cholesterol, while almond butter helps raise your good cholesterol levels. Yes, the difference is certainly huge!

This is one reason I substitute peanuts with almonds in all recipes requiring the former! Do almonds disappoint? Na, never!

The distinct aroma and taste of roasted almonds easily makes a great substitute!


So, let's come back to the almond butter fudge vegan recipe, which is simply churning of nuts together for a nutty twist.

Let's see how to make this vegan gluten free recipe:

Badam burfi Ingredients
1/4 cup  homemade almond butter (check the recipe here)
8-10 walnuts
4-5 pistachios
4-5 raisins (optional)
1 tbsp- honey (or more depending on your likeness for your sweet tooth) - you may even add jaggery or gur  if you have reservations about using honey in sweets
1 tsp- roasted poppy seeds
1 tbsp- roasted sesame seeds
You may add fennel seeds or cardamom for flavor.

Procedure
  1. Roast sesame seeds and poppy seeds separately.
  2. Take all nuts in a blender. 
  3. Add almond butter and honey or gur.
  4. Run the processor until everything mixes up well. The walnuts may give you a hard time, but that's okay. You may leave them as is. You will love the walnutty bites for sure.
  5. Take out the dough in a tray or aluminum foil.
  6. Roll out with a rolling pin (belan). Press with a heavy vessel until the burfi sets. 
  7. Cut into desired shapes and sizes.
  8. Enjoy this easy almond butter burfi recipe and enjoy nutty bites.
