Who says Oatmeal is bland. It tastes delicious when baked. This Oatmeal digestives recipe is one typical example of this. Anybody that hasn't tasted Oatmeal yet can't say anything about the healthy cookies ingredients.

Those who love the fiber rich grain can't tell this either. This spells the goodness of oats. Do I sound too complicated? Well, I am a big oats lover and make sure it's part of my regular diet. You won't believe that oats make the dough pliable so you can make soft fluffy rotis.

Use Oatmeal to create magical desserts_-the choices are many, you just need the guts to go ahead with food experiments. Imagine Creamy, frothy, and luscious kulfis. Yes, this is what you get from the addition of Oatmeal. But my best take on oats is baking healthy cookies.

I have made these digestives in two different ways - just played with the ingredient amounts. Here is the second ingredient list. The rest of the procedure is almost the same.


Ingredients for Whole Wheat Digestives
1 cup- oatmeal
3/4 cup- whole wheat flour
3-4 tbsp- cold ghee/butter
3 tsp- cold milk
3 tbsp- jaggery powder (gur) (Please add according to your taste..I take it less sweet)
¾ tsp- baking soda or 1 tsp baking powder

Procedure
I made this batch of digestive cookies healthy for my family in Patiala, so it bears the stamp of approval from them.
  1. Take a large mixing bowl.
  2. Begin with mixing ground oats powder with whole wheat flour.
  3. Next throw in baking soda.
  4. Sieve the flour twice or thrice, so baking soda is well incorporated.
  5. Mix jaggery powder or sugar. I have included jaggery
  6. Now add cold butter cut into small pieces. Or you may grate the cold butter. Cold butter gives you flakier, crispy cookies.
  7. The flours would give you bread crumb-like look. Once you achieve this kind of consistency, take a deep breath. You are on right track.
  8. Now let's bind the dough with milk-  1 tbsp at a time is a great idea.
  9. When the dough comes together and is not too soft, nor too hard, stop there. It should be semi soft.
  10. Make into a log or ball and cover tightly with aluminium foil/parchment paper and refrigerate for 30 mts.
  11. Preheat oven (mw convection) at 180 degrees for 10 mts.
  12. Take out the dough log and flour your counter top where you want to work with the dough.
  13. Roll out the dough like a chapati. Of course, this should not be a thin as chapati. Make it like a little thicker chapati .
  14. Cut into shapes of your choice.
  15. The options are abundant - use cookie cutters to create different shapes.
  16. But if you want an authentic look for your healthy digestives, take a small bangle and use it to cut round pieces.
  17. Place at a distance from each other - the cookies should not be clubbed together - maintain distance!! :)
  18. Bake at 180 degrees for 15-20 minutes. My batch was done in 20 mts.
  19. Take out the cookies from the oven.
  20. Place each cookie on a cooling rack. 
  21. Test a cookie by making a hot cup of tea and dunking the digestives in your cuppa tea.

  1. Take an iron skillet. Place a wire rack atop. Then place the greased tray. Evenly place cookies on the tray. Cover with a big vessel. Bake on slow-medium flame for 10 mts. Check after 10 mts and flip cookie sides. Then bake the other side for 8-10 mts. Let the cookies cool on a cooling rack.

Here is one simple, tasty quinoa recipe from a dear friend Sangeeta Cahndra. 
  • Soak one cup quinoa in water for 10 minutes.
  • In a kahadai saute one chopped onion. 
  • Add fresh green peas. Cook till tender.
  • Add broccoli florets.
  • Saute for few minutes. 
  • Drain water from quinoa and add to the khadai.
  • Now add 2 cups of water and salt and garam masala. More masala can be added according to taste. 
  • More veggies can be added according to preferences. 
  • Cover and cook until all water is absorbed. Shall take approx. 15 to 20 minutes. 
  • Switch off the flame and keep it covered for a few minutes. 
  • Now open and serve.

Quinoa is power packed pseudo cereal , gluten free , rich in fiber n important minerals like iron , magnesium 

1. Quinoa grains ...1 cup
2. Veggies as per choice / availability ... (Beans carrots mushroom pre cooked) , bell peppers diced , onion chopped small 
3. Lemon 1 
4. Mustard seeds 1 tsp
5. Chana dal 1 tb sp pre soaked in water
6. Peanuts... 1 tb sp 
7. Coriander leaves n curry leaves ( I have used curry leaves powder )
8. Green chillies 2 
9. Salt , turmeric (optional 
10. Coconut powder or gratings 1 tb sp( optional ) 
11. Oil ..3 tsp 
12. Water 2 cups 

Method 
1. Boil quinoa in a pan .. Initially when water is boiled ,add raw grains n cook on very low heat for 15 min .let the grains sit for some time . Keep them covered
2. Heat oil in a non stick wok . Splutter Mustard seeds n green chillies n cover to prevent the out burst of chillies on your face . Add Chana dal after draining water n patting it dry , now add peanuts n sauté when done put onions n sauté till golden brown
3. Add veggies n sauté .Add quinoa n bell peppers n let it sit for some time 
4. Enjoy this with coconut chutney or any green chutney

QUINOA PUDDING by Madhu Agnani

Quinoa ....1cup
Milk .....3n half cup 
Cinnamon ....a pinch 
Sugar....... Half to three quarter
Cardamom powder.....1/4 tsp
Some pistachios chopped 
Some fresh fruits kiwi , fruit candies chopped...papaya candies 

Method
1. Boil 3 cups of water n add quinoa
2. Keep it at low heat n stir frequently 
3. Add cardamom powder ,cinnamon powder n after half done , sugar , pistachio 
4. It will take at least 30-40 min at very slow heat ...Keep off flame...let it sit for sometime 
5. The resulting taste is fantastic ..
6. Garnish....with fresh fruits n fruit candies

So now you have realized the benefits of whole grains. However, it is important to read the labels correctly when it comes to choosing whole grain flour in the market.

Eggless Atta Cookies Ingredients


1/2 cup- whole wheat
1 cup- oatmeal
¼ cup- desi ghee/clarified butter
¼ cup- olive oil/ vegetable oil (or just replace with butter)
Almonds or nuts of your choice
1/2 tsp - green cardamom (elaichi)
1/2 tsp - fennel seeds
1-3 tsp- milk for binding the dough
1/4-1/2 cup- sugar (depending on your sweet taste)

Whole Wheat Flour Cookies Procedure



  1. Sieve whole wheat flour and oatmeal 5-6 times. This will help aerate the flours, making them perfect for raising agent-free cookies.
  2. In a separate bowl,  mix powdered sugar with ghee/butter and whisk well until light & fluffy. This is a crucial step in the preparation of raising agent-free cookies. If you go wrong here, you may get hard cookies.
  3. Mix elaichi, roasted fennel with the flours.
  4. Add slivered/chopped pistachio and almonds. 
  5. Drop the sieved flour into the ghee-sugar mixture.
  6. Do not knead. Just gather the ingredients.This is another important step in the no baking powder cookie preparation.
  7. Add milk if it is difficult to bind the flour into dough. We need a soft dough, so you can add 2-3 tbsp of milk.
  8. Make into a log.
  9. Fold into aluminum foil/parchment paper and refrigerate for 30 minutes or longer.
  10. Preheat the oven at 180 degrees for 5 minutes. I airfried the cookies. You may preheat the airfryer for 3 minutes at 180 degrees.
  11. Cut the log into desired shapes. Do not keep the cookies too thick or thin.
  12. Grease the baking tray. I airfried in the airfryer basket, which does not require any greasing. Just place the cookie pieces and you are done. The airfryer will take care of everything else.
  13. Bake the eggless wheat cookies at 180 degrees for 16-18 minutes. If the cookies still look little whitish, you may heat for 2 minutes longer. Do not overheat.
  14. Remove the cookies on a cooling rack. Store in an air tight container upon cooling completely.
  15. Enjoy mel-in-mouth eggless cookies with a hot cup of tea. I will soon share kaju cookies with oatmeal - a no raising agent recipe. Keep watching this space.

Here's another version of whole wheat flour cookies with pistachio. Lending a unique flavor to the cookies, pistachio negates the need for adding any other flavorant or additive to the cookies. So this makes these eggless, no additive cookies.

If you want to bake on stovetop, here's the procedure:

Take one iron tawa and place a nonstick tawa or pan over it. Grease the nonstick pan with oil.
Place cookies on it and cover it. Cook on low flame.
Check after 3-4 minutes. Then change side of the cookies. Again cook for 3 minutes or more.
If you are a health freak, try to avoid refined flour/all-purpose flour/ white flour or maida from your meals. There are better healthier alternatives in whole grains.

Corn is a fruit belonging to the maize family.

How to make cornmeal at home?
Well, I have never done so personally, so cannot share my first hand experience with you all, but it is easy to do.


  • Simply take corn kernels and pat them dry.
  • Grind them in your grinder or food processor.
  • Here's how to make cornmeal. Easy na!!!


No this isnt cornmeal lemon cookies recipe, but a simple blend of cornmeal with almond meal to give you power-packed, taste, and healthy cookies.

Let's get back to the yellow cornmeal cookie recipe:

Ingredients

1/2 cup - cornmeal (makki atta)
1/2 cup- wheat flour
1/2 cup-almond meal/powder
1/4 tsp- baking powder
2 tsp- ghee/clarified butter
2 tbsp- olive oil/ saffola/vegetable oil
1 tbsp- curd/yogurt
2-3 tbsp- milk (or as needed)
3 tbsp- sugar (as per your taste)
1 tsp- fennel seeds (lifts the aroma of these healthy cookies)


Cornmeal Cookies Procedure

  1. Sieve wheat flour, cornmeal, and baking powder.
  2. Add almond powder. Mix.
  3. Mix curd, oil, ghee in a separate bowl. Whisk well until smooth.
  4. Add fennel seeds to the flours.
  5. Pour the wet ingredients into the dry ones.
  6. Rub with your hands. Do not knead.
  7. Add 2 tbsp of milk to collect the dough. If needed, add 1 or 2 more. In my case, 3 tbsp of milk was sufficient. We do not need a sticky dough. It should not be too soft, nor too hard.
  8. Make 2 or 3 logs of the dough and cover each log with aluminum foil and keep in refrigerator.
  9. I refrigerated the dough logs for the whole night.
  10. Next morning, cut the log into different desired shapes and sizes.
  11. Preheat oven for 6 minutes at 180 degrees.
  12. Grease a baking tray and set the cookies on the tray, placing each cookie at a distance from each other. This allows even baking.
  13. Bake for 20 minutes at 180 degrees. I used microwave convection mode at 180 degrees for baking.
  14. I baked another set of cornmeal cookies on gas stove on a skillet. Place an iron tawa on the burner. Grease a thick steel plate or nonstick utensil. Place cookies evenly on the utensil/plate.
  15. Set the gas to a low flame.
  16. Cover the cookies with a big utensil.
  17. Bake for 8-10 minutes. check and change sides. Keep an eye on the cookies, as they bake really fast on gas. Keeping for too long would brown them. The second side bakes quickly - may take 5 minutes. 
  18. Let the cookies cool on a cooling rack.
  19. ENJOY the healthy cornmeal cookies with a cup of hot tea. 
  20. Store in an airtight container.

Festive Recipe Collection- Diwali Gifts, Sweets & Snacks

After getting successful reviews on my first Festive Recipe post, here I come with another one on Diwali sweets. Did I say these are healthy sweets that make equally attractive Diwali gifts and giveaways?

 India is a land of festivals, with Diwali being the most popular of all Indian festivals, celebrated with much pomp and show. The Diwali fervor is distinct from the enthusiasm that any other festival brings along. The festival of lights, as Diwali is popularly called, is celebrated throughout the country, from Kashmir to Kanyakumari. It is the celebration of Lord Ram's return to Ayodhya from his 14-year exile. Sikhs celebrate the festival to commemorate the return of Shri Guru Hargobind from Gwalior along with 52 rajas who were taken as hostages by the then Mughal ruler.

There is a sweet story how the sixth guru of Sikhs rescued these 52 rulers. Guru Hargobind got a gown stitched with 52 hems, and each raja got hold of one hem while the guru came out of the fort.

Now let's come back to this festive collection post. In continuation of my first festive recipe collection, I have come up with this one, since I got an overwhelming response from various groups. Since these are healthy recipes, you get to enjoy the festival of lights with healthy sweets and savories guilt free.

Preparing these festival sweets is a breeze. Serve them to unexpected guests this Diwali. I won;t be wrong to say that these make excellent Diwali gifts. What do you say?


Coconut burfi by Chitra Balachander 

Chitra Balachander is a sweet person at heart, with exceptional culinary skills. The kind of recipes she comes up with amazes me. Ingredients 
Fresh grated coconut 2 glass
Sugar 1.5 glass
Water 1 glass
Cashew nuts 10 number roughly chopped
Elachi powder 1 tea spoon
Ghee to grease the plate

Method 

In a heavy bottom pan add water and sugar and boil it till u get a thick one string consistency.
Add grated coconut and elachi powder.
Keep on mixing in low flsme
Add cashew nuts
Mix it till the mixture starts leaving the pan and become like one big ball.
Immediately pour the mixture into the greased pan
Allow.it to come down to the room temperature.
Make pieces of your choice.

Badam burfi by Chitra Balachander

Almonds are the healthiest of nuts available. Badaam burfi is a healthy way to enjoy Diwali sweets. I am in love with almond ladoos and burfis. This special festival sweet packs a powerful punch and is equally delicious. Did I say it is easy to churn out?


Ingredients
Almonds/badam 400 gms
Sugar 800 gms
Safaron 1 gms
Ghee 100 gms
Elachi powder 2 tea spoon
milk as required to grind
Method
Soak and peel the almonds and make it a coarsely paste by adding milk. Then in a pan put sugar and put water so that the sugar get wet and make a single string syrup/chasni. Then add the grinded paste and safaron and ghee and mix it continuesly till the mixture start leaving the pan. Keep ready the greased plate with ghee.spread the mixture immediately in the plate and let it come to the room temperature.cut into desired shape and store in air tight container once ita fully cold

Ingredients
Besan/gram flour 2 glass
Powder sugar/bura sugar 1/2 glass or as per taste
Ghee 1/2 glass
Cardamom/elachi powder 2 tea spoon
Almonds for garnishing (optional )

Method

Take a heavy bottom khadai and add ghee.
Àdd besan and roast it till it starts leaving ghee
Please roast it in low flsme don't be in hurry
Switch off the gas and allow the roasted besan to cool down little
Now add elachai powder and sugar powder and mix well.
Now take small portion of the mixture and give it the shape of ladoos.
Now garnish with almonds
Allow it to cool down completely or it will with each other

  • Take care it does not become paste.
  • In an open pan or wok,heat one spoon clarified butter(desi ghee),roast d daal on low flame till aroma starts coming

  • Once soft,add 250 ml milk,sugar to taste n cook till thick....
  • Keep stirring in between..
  • Garnish with crushed cardamom seeds n almond slivers.....serve hot or cold...

  • Dry roast four spoon flax seed powder....

  • Roast for some time
  • Turn off d flame.
  • When it dries,knead a dough by adding one spoon milk...u may need to add one more spoon of milk...knead properly

"Ready in a jiffy......no hastle,no oil,no frying.....cool, soothing n yumm...., " says Deepti


  • Dip one brown bread slice in water
  • Take out immediately n spread on ur palm.
  • Squeeze out all d water.
  • Put some small broken pieces of chashews,raisins in it.
  • Close in in d form of a ball,squeeze out any water left.
  • Make as many vadas as u like in this way.
  • Put in serving plate or d plate u are using for eating into,cover with salted beaten curd.
  • Sprinkle pepper powder,garam masala,roasted cumin n aesfotida powder,dried mint powder, red chilly powder
  • Garnish with some more dry fruit,bhujia or boondi,fresh mint leaves,green chutney,tamarind chutney .......serve.....

Kaddu /petha/ pumpkin halwa by Geeta Sachdev

Geeta Sachdev is a sweetheart - a sweet lady with a big heart and amazing skills in the kitchen. She cooks up delicious food and treats everyone alike.  This pumpkin halwa recipe makes a sumptuous Diwali sweet. Serve it to guests when they come calling suddenly.

Pumpkin /peela kaddu/pethe ka halwa
1/2 kg kaddu
1/2bowl ghee
1/2bowl sugar /per taste
1/2to1bowl water
Dry fruits crushed seeds of cardamoms



Peel wash n cut petha into sm pieces ..boil in cooker along vd water fr 2to 3 whistles .off d flame..let d steam release it's own .
Open d lid .mash petha vd masher or vd back side of d ladle ..if there is sum water ..let it cook till d water evaporates .
Heat ghee in a kadhai roast chopped nuts lil den put mashed petha in it ..cook fr. few mins den add sugar n cardmoms..mix well cook till halwa leaves d sides of d kadhai or water evaporated frm it ..
Place in bowl serve vd melon seeds or nuts

Wash peel n cut small ripe papaya in to pieces.. boil in cooker along vd 1/2 glass of water after 3to4 whistles switch of d gas.. let it cool ...open d lid ...mash vd spatula or karchi ..cook it till all water dries up..add crushed cardmom n wash raisins ..mix sugar acc to taste n let it cook completely . till water dries up n mixture leaves d pan . .at last add 1to 2 tsp gesi ghee .add n roast almonds in it .cook till mix ...serve hot garnish vd dry fruits.















BREAD WALNUT CHOCO FLAVOURED BURFI by Geeta Sachdev

This makes a perfect Diwali gift. What do you think? Different, unique, and of course delectable, bread walnut burfi flavored with chocolate would water the mouth of just about anyone. 


Ingredients

2 cups fresh white bread crumbs.i used 7 slices of brown bread

3 tbsp clarified butter or ghee

2 tbsp liquid chocolate .i used neutella or can used grated pieces of any choclate of ur choice or skip this ingredients
1 cup milk 
1cup sugar
1 cup crushed walnuts
1/4,tsp cardamom crushed

Make the bread crumbs,cut the bread in small pieces and do not remove the edges,i used grinder to make crumbs
Dry roast the bread crumbs over medium heat in a frying pan or karahi for 2 mins stirring continuously (with white bread this will take about 5 ..6 minutes).roasted bread crumbs will be light golden in colour . 
Sprinkle the sugar and keep roasting .sugar will be caramelized with bread crumbs and will be light brown in colour.this process will take about 8 minutes
Add cardmoms and milk, keep stirring ,mixture will be in texture of soft dough
Add ghee or butter along with choclate syrup and roast the mix with ghee for another 5 minute until mix will start leaving the edges
Add the walnuts and fold it with mix
Turn off the heat and pour into over greased plate
Spread it in square shape let it set for about half until it comes to room temperature
Cut them in 1 I square

Delicious burfi is ready .you can store the burfi outside for a week.

¾ katori urad daal aata
2 heapful spoon oats,grinded to powder
3spoon desi ghee
Less than Half katori sugar
Grinded dry fruit like almonds,walnuts,char magaz,motion eliachi
Almond slivers for garnish
¼ katori water
¼ katori milk




Heat ghee in a wok...
Add urad atta n roast on low flame....
When it's color changes a bit n light aroma starts coming,add oats powder....
Keep roasting n stirring till ur house fills with sweet aroma of roasted daal...color will also change frm white to brown....
Meanwhile heat water......
Nw add dry fruit n sugar to atta.....
Mix n add water n milk...it will immediately become a lump....roast fr a while,stirring continuously...
Turn off d flame...
Grease a plate n transfer the halwa to it...
Spread evenly....sprinkle almond slivers....let cool fr some time....wen still little bit warm,cut in desired shape n store in fridge...

Ingredients for this manna from heaven....
1 cup almonds
2 cup rose petals,dry or fresh if available
1 cup melon,watermelon,pumpkin,cucumber seeds
1 table spoon moti Saunf
2 spoon poppy seeds
1 spoon black or white pepper powder
15-20 green cardamom
Some strands of saffron
1/2 kg sugar
Preservative
Method...
Soak almonds for 5-6 hours....Soak rest of d ingredients except sugar separately in water.....this water will b used for making sharbat...Peel almonds.....put all d soaked ingredients in grinder,use the water to grind properly....pass through sieve...again grind...repeat till only roughage is left...put to boil on medium to low flame... add sugar....keep stirring....turn off d burner wen desired consistency is achieved.....let it cool.....add some preservative.....ready to use in milk shake or water....

If u have unpeeled seeds of melon n watermelon,they will also do....

Crush three oats marie biscuits with your fingures as fine as possible.....divide the powder to make two lollies...to one part add malai n knead like dough....roll into ball ...prick with toothpick....plain lolly is ready.....now add jam or chocolate sauce or fruit pulp or anything that takes your fancy to the other part....repeat the procedure of the first one....colorful,tasty lollies are ready.Keep them in refrigerator fr some time so dat they r firmly set.

3 slices atta bread
1 over ripe banana
2-3 spoon sugar powder
Half katori or more milk
3-4 drop vanilla essence
Half spoon dry fruit like almonds,walnuts,char magaz,grinded
In a blender or wet jar,take banana,bread n milk n blend to a smooth batter...nw,add oatmeal,sugar powder,vanilla essence to it n churn again so dat aeration is done.....d consistency shud be like idli batter....meanwhile, heat appa patra...grease its digs.....keep flame low,pour d batter in them....let cook fr 7-8 minutes, flip d sides n heat from this side also......let them cool.....yummy muffins r ready to accompany ur tea or coffee..
