Perhaps we are not used to thinking on these lines until it happens incidentally and you want to share your experiment with others. I am happy to say that I have experimented with making curd without starter and it gives me creamy and sweet curd.

After all, she had 20-30 buffalos and cows in her home. Whenever we would visit nanka (maternal home), we would get to relish fresh milk (does it have a match).
So I would see nani make different uses of milk. Curd was one of them. I learned how to make curd at home that doesn't become sour from her.
My love for curd is as old as my life. I am a crazy curd lover who needs nothing but a big bowl to satiate her hunger cravings.

Here's how to make curd without curd/starter/jaman
How can we make curd without using curd in milk? Well, making dahi without starter and with almonds is a unique way to set curd without using curd. If you are pondering how to of Curd without the Jaman, here's how to set curd with almonds.
Q. How to make curd at home without jaman or starter.
Boil milk.
When it is lukewarm, stir in 1/4 tsp of curd.
Following this, add 3-4 almonds. Whisk it well.
Let the curd sit for 5-6 hours.
Once the curd is set.
Remove almonds.
Wash and refrigerate.
Next time when you want to set curd without curd, add these almonds to lukewarm milk.
Now you do not need to add jaman or culture or curd for setting curd.
Keep aside for 5-6 hours.
You will be surprised to see the results.
The curd that you make without using curd is sweeter and creamier than the one using culture or jaman. You can always wash almonds and refrigerate them.
Use these almonds 8-10 times. I have not used almonds beyond this period. What I do with the almonds is throw them into the soil or compost bin.
Q. How To Make Dahi Without Khatta or Starter?

I have been making curd with almonds for over a year. The curd recipe is a keeper and shouldn't disappoint anyone looking for a way to set curd without curd.
Activated almonds are good to go as long as there is no mold formation...just wash them well each time and refrigerate...almonds should be good to use for at least 15 days if used regularly...if you plan on going for a trip (of course after corona), then you can keep a couple of new almonds activated after 1-2 uses..cover and keep in the refrigerator...and they should remain good when you return from a holiday.
Q. Can we do the same thing with vegan curd?
