Did you know bottle gourd is one of the healthiest veggies around? But the humble veggie never gets its share of love for its bland taste - do you know how to make lauki delicious?

So we started with this lauki challenge in our Facebook group- Healthy Recipes by Homemakers. This was an invitation for all members to post their favorite lauki recipes Indian.

The lauki challenge post got a blockbuster response, to my surprise. Frankly, having seen people detest bottle gourd, I was wondering if there was anybody who actually loved the humble vegetable (except me). The lauki recipes Indian, which comprise lauki recipe Bengali, lauki recipe Punjabi, ghiya recipe, dudhi recipe, are a mix of stir fries, curries, sweets, shakes, soups, ice creams, and snacks.

Lauki Bharta Recipe by Parshotam Kaur

2cup grated louki,
2 onions finely chopped,
 2-3 tomatoes chopped,
1piece ginger grated,
1sp coriander powder
 1 green chilli
1/2sp red chilli powder
1-2tbsp oil /ghee
 garam masala
1/2sp haldi (optional)
chopped coriander leaves
1/2sp jeera,
 3-4cloves
1-2sp cream /malai (optional)


How to make lauki bharta by Parshotam Kaur

Heat oil /ghee in a wok, crackle jeera, add cloves, onions fry till light pinkish add grated ginger sauté add coriander pd, haldi mix add tomatoes & gr chilli, salt.

Cook covered on slow flames check after 5mins stir
Cook till tomatoes turn mushy now add grated louki mix every thing cover the wok and cook till it turns soft raise the flames to medium & fry stirring continuously (add cream if you want) till oil appear sprinkle garam masala switch off the heat.
Transfer to a bowl garnish with coriander leaves.
Enjoy lauki bharta with roti.

Lauki ki khatti meethi chutney ingredients

500gm lauki
About 180gm jaggery accordingly
3spoon imli paste/tamarind
1/2spoon kalaunji (black nigella seeds)
Black salt
1/4spoon pepper powder
1/2spoon char magaj (melon seeds)
Red chilli powder (optional)

How to make lauki ki chutney

Grate Lauki
Cook in a thick bottomed wok.
Add salt to hasten cooking.
Keep stirring in between.
When it gets tender, add jaggery along with other ingredients.
Keep stirring
When it thickens and reaches desired consistency, turn off d flame.
Let cool completely.
Store in airtight bottles.
As I have added Jaggery and imli, so color is dark. Adding sugar will keep color light.

How to make bottle gourd recipe of laddoo

Grate n boil Lauki.let it cool.
Boil milk. Let it simmer to half. Add milk powder. Mix properly. Add Lauki n condensed milk. Cook on high flame till it remains half.add cardamom n other dry fruits except almond halves. . Keep stirring in between to avoid sticking to d bottom. Add sugar.keep stirring. Add Let it dry completely. Wen cooled, shape into balls. Press almond halves one on each. Enjoy any time of the year.

Char magaz
Almond slivers
Almond powder

Boil milk. Let it simmer to half. Add milk powder. 

Mix properly. 
Add Lauki n condensed milk. 
Cook on high flame till it remains half.
Add cardamom n other dry fruits . 
Keep stirring in between to avoid sticking to d bottom. 
Add sugar.keep stirring. Add Let it dry completely.
Garnish with almond slivers, chopped pistachios n crushed dry rose petals.


Lauki with wadian by Satinder Wadhwa

Heat little oil in a pressure cooker. 
Break 1or 2 vadis n saute it. 
Remove it. Heat some oil...add jeera..add chopped tomatoes. 
Saute it well. 
Add salt,haldi pd,dhania pd,little red chilli pd. 
Add onions, chopped ginger, chopped lauki n fried vadis. 
Saute well.
Add some water 
pressure cook it for about five minutes.
When pressure is released adjust the consistency of the liquid in lauki. 
Garnish with green coriander leaves n serve with roti or rice.
You may make it without vadis too in the same way.Lauki raita is also made very often at home.But I pressure cook the grated lauki to soften it. I m lucky all my children n grandkids too have this veggie without any hassel.

Easy bottle gourd sabji ideal for kids tiffin by PV Iyer


Very simple but flavourful. This sabji is prepared mainly when your stomach is not well or when recovering from illness. But this is my family favourite so i make it very often, whenever I get very fresh n tender louki. My husband asks me to make this sabji when he is back from long tour and he is bored with restaurant or masalewala food. I remember when I was newly married and I made this one...my MIL said to me....how flavourful this is without adding any masalas! So do try it guys😊😊

Lauki recipe south Indian ingredients

Jeera
2 tsp Coconut oil
Pinch of hing
Pinch of turmeric powder
Soak 2 tbspn moong dal in water
2 green chillies chopped
Few Curry leaves
1 large bottle gourd peeled and chopped
Salt to taste

Heat oil add jeera, chillies, hing, turmeric,

Drain water from moong dal and add it too stir these well.
Add curry leaves and bottle gourd and mix.
Cover and cook.
Add salt in the end as the sabji shrinks to almost 1/4 and you may end up adding more salt.
Garnish with chopped coriander.

Lauki Pav Bhaji Ingredients

Potatoes chopped
2 medium
Lauki chopped 1
cup
Cauliflower chopped 11/2 cups
Carrots chopped 3
Boiled peas 1/4 cup
Capsicum chopped 1
Onions chopped 2 large
Fresh tomato puree of 6 medium tomatoes
Ginger garlic paste 1tablespoon
Pav bhaji masala powder to taste
Salt, degi mirch to taste
Oil 1 tablespoon

Method to make lauki pav bhaji recipe

Boil washed and peeled chopped potatoes, lauki, cauliflower and carrots in a pressure cooker with 3 cups of water till soft. When cool mash it well.
Heat oil in a wok.. Fry onions till golden brown.
Add ginger garlic paste and fry well.
Add tomato puree, peas and capsicum and fry well.
Add all dry spices stir all together.
Mix in boiled and mashed veggies and saute very well.
Add some water to get the required consistency .
Cover and simmer for 10---15 minutes.
Serve hot with a dollop of butter.
Slit each Pav and roast with a little butter.
Enjoy ..
You may even add 1 small beetroot and boil with the veggies. It lends a beautiful color and makes it more nutritious. I did not have.. So did not add.

Dal and mix veg idlies with lauki by Geeta Sachdev


For the batter ingredients

1/2 cup yellow moong dal (dhuli dal)
1/2cup other mixed dhuli dals like arhar ,chana urad and masoor
1/2cup grated lauki /bottle guard
1/2cup finely chopped beans and capsicum
{1tbsp oil ,1tsp mustard seeds ,few chopped curry leaves ,salt and lil garam masala for cooking of these veggies }
{1tbsp besan
2tbsp dahi
1-1/2tsp sugar
Lemon juice of 1 sm lemon
Grated ginger of 1/2inch p
Salt and green chillies per taste
A pinch of heeng/asafotida
1/2tsp haldi
1tbsp oil
1-1/2tsp fruit salt /eno for idli batter }
For tempring
1tbsp oil
1/2tsprai /mustered seeds
1/2tsp til/sesame seeds
A pinch of heeng
Green chillies ..slit and remove seeds dhania ..decicated nariyal..curry leaves. 1tbsp each.

How to make lauki dal idlis 

Soaked all dals together in sufficient water for over night or 4 to 5 hrs ..
Combine dals green chillies and ginger blend in a mixture using little water to make a paste of pouring consistency..
In a pan heat oil crackle rai /mustured seeds then add beans and capsicum cook for 2 mins add lauki fry and cook till soft add salt and garam masala put off the gas..
Transfer the dal paste to a bowl add salt sugar heeng haldi besan curd and lemon juice with cooked veggies mix well to make a smooth batter
Just before steaming sprinkle fruit salt with 1tbsp water and mix lightly
Pour the batter into a greased microwave idli maker
Microwave it for 5 to 6 mins or till the idlies are cooked keep aside
To check insert a tooth peak in a piece of idli after 5 mins if peak comes out clean then idlies are ready otherwise cook it fr 2 more mins...after done give it 2 mins standing tym
Separate all pieces with knife from the idli maker
Heat the oil in small non stick pan add rai when crackle add lill heeng g chillies and sautey on medium flame for 30 seconds
Tadka is ready
Pour the tempring over the prepared idlies and spread it evenly
Sprinkle coconut and dhania on top
serve hot with green chutney nariyal chutney or sauce per choice

1/2kg Lauki cut in cubes
1bowl arhar dal
1onion grated
2tomatoes choppes
1tsp ginger garlic paste
1 chopped green chilly
1tsp desk ghee
Salt to taste
1/2tsp red chilli powder
1/2tsp garam masala powder
1tsp coriander powder
1tsp haldi powder
1tsp cumin seeds
Pinch of hing

Wash dal 2-3 times ND keep aside.
Now heat cooker put ghee in it now add cumin seeds nd hing let it spullter.
Now add grated onion ND ginger garlic paste ND roast it till brown. Now add tomato puree ND all the spices nd dry them till ghee separates.
Now add dal ND Lauki ND roast it an time
Now add water accordingly ND close the lid of cooker nd cool till 2-3 whistle. Now sprinkle chopped coriander ND njoy wid Roti or paratha.

Luki juice recipe by Nirali Shah

 In her words, "Extracting lauki juice in a hard juicer and drinking half to 1 glass of it hydrates till evening." Looks like it is extremely easy to make lauki juice at home, right? But before trying out the lauki juice recipe, make sure you do a taste test with lauki. Sometimes bottle gourd is bitter, which can be poisonous.

Simple bottle gourd soup by Saswati Senapaty 

Recipe :- In a Pressure cooker, add 1/2 piece of a whole tender bottle gourd (after removing skin), 1 carrot , 2 white onions, 1 green chilli., few coriander stems.
Pressure cook it for 2 whistles then churn these.

Again, boil this mixture for 3 min and add a generous amount of pepper powder, 1/2 lemon juice, coriander leaves and for the filling I have added few chunks of paneer.

Lauki ka masala

Heat 1tsp butter.
Add chopped onions and cook until light brown..then add 1 tomato.
Add jeera (cumin) powder, coriander powder, turmeric, salt , a pinch of garam masala.
Fry for again 2 min..add 1 spoon of water.
Add chopped bottle gourd and cook on a slow flame.
Keep covered with a lid. It'll take 7 min.
Turn off the gas.
Add roasted jeera powder.
Decorate with coriander leaves.

Not a fancy recipe of bottle gourd but a mysterious one.
Just grate or mince lauki and prepare your roti dough with it, instead of water. Children will never know that they are eating lauki.

Lauki kofta kadhi
I make lauki koftas in air fryer. I had never made koftas earlier as my hubby doesn't enjoy fried food. But for past 2 years since buying air fryer, I make lauki koftas frequently. The kids too love it.
Grate lauki. Sprinkle some salt on it, leave for 10 mins. Squeeze out all the water. Keep the water aside for gravy.
To the squeezed lauki, add besan, salt, red chilli powder.,ajwain. Make into koftas . Brush little oil on them and air fry them.
Make a gravy of tomatoes and beaten curd with all dry masalas. Leave the koftas in them an hour before serving. Add lots of chopped green coriander.

About 4" piece of lauki
1 tomato
1/2" ginger
A handful of coriander leaves
1/2 lemon juice
Salt to taste
Water 1 cup
Churn all ingredients in a mixie. Fill your fancy glass(gives you a nice feeling 😊) with the juice. Enjoy
Have this juice as detox juice at around 6 pm. Will fill your stomach. As it is full of fiber will help improve digestion

Millet Cake with lauki (bottle gourd)
I do not have a bundt pan, so this was my attempt at a DIY bundt cake without it 📷:)
Sweetened with homemade golden syrup with jaggery
The cake is nutritent-dense from millets, almonds, and flax seeds. It gets its antioxidant punch from cocoa powder.
You do not need any liquid except bottle gourd in the recipe (2 tbsp oil).
It's not Gluten-free since I added little amount of whole wheat flour as a binder. The cake is sweetened with homemade golden syrup with jaggery. It's a bit on the drier side but it can be taken care of with the addition of oil or cream.
The health freak in me loved it while everyone else found it okay.

Take 1/2liter milk
2tbsp corn flour
4tbsp sugar
4tbsp milk powder
Chopped dry fruits like kaju badam ND pista.
1tsp ghee
2tsp elaichi powder

First grate Lauki .now heat kadahi put ghee in it now add Lauki ND roast it till all the water evaporates.
Now add milk ND let it boil for few seconds now, add cornflour dissolved in cold milk ND let it boil for an tym.
Now add milk powder dissolved in an water ND let it boil till thicken. Now add all the dry fruits elaichi powder and sugar ND again boil it till the desire consistency. Now let cool down completely.
Now churn this mixture into mixer jar ND freeze it for about 4-5hours or till it turn into solid. ND njoy.

Methi Lauki oats nd wwf laccha paratha

1bowl whole wheat flour
1bowl oats
Washed ND chopped methi 1bowl
Wash peeled ND grated Lauki 1/2kg
Grated onion 1
Chopped green chilly 1
Chopped coriander leaves 1tbsp
1tsp Red chilly powder
1tsp garam masala powder
1tsp Carrom seed
Salt to taste
Mix all ingredients well ND make semi soft dough ND keep it aside fr 10min.
Now roll a big Roti apply sm ghee the fold like layers ND make a ball. Now roll this ball like a thick Roti ND roast it on heated Tava ND make paratha. Njoy it wid home made tomato acchar.

Lauki Malai Sabzi by Geeta Sachdev

Lauki Malai Sabji
Take 1 medium size lauki .or half of one lauki..peel wash grate ...
Then boil water in a pan put lauki with salt cook for 1 to 2 boils..off the gas cover it .
After few mins drain it remove access water don't throw remaining water keep it aside use this for kneading the dough or for gravy
Now grate or finely chop 2 onions 2 tomotoes..green chillies 1 or 2 or per taste ..ginger sm p..
Then heat oil or ghee in a karahi...put heeng jeera fry onions till golden brown or leave the sides...
Then add green chilles and ginger sautey and mix tomatoes cook till tender..
Then add 1/2 bowl home made paneer this paneer have made with the remaining butter milk of malai which I had used to bring out makkhan
mix all ingredients n cook for few mns
Now add 1 bowl malai ..mix all and cook till it leaves oil on simmer ...
Add haldi dhania p garam masala p saunf p .sabji masala ..kasoori methi...degi mirch 1 sp each and salt per taste...mix all .
Add lauki cook mix and cook n acc to required consistency add 1bowl remaing water of lauki...cook for few mins till oil appears on the top .off the gas ..garnish with onion tomato and dhania leaves ...serve hot

We use Bottle gourd twice a week
Sorraka adai (bottle gourd adai)
Soak - 2 cups of rice (for five hours)
Salt as per taste
Peel bottle gourd chop into pieces (use only the white portion.. remove the seeds)
Grind rice and when it is almost grinder add bottle gourd grind like adai batter.
After one or two hours, while you are about to make adai temper it with onions, hing, red chilli, Urdu Dal and channa dal.
Make adai and enjoy with onion chutney.

Creamy Masala Lauki Recipe


CREAMY MASALA LAUKI
Peel and wash lauki....and cut in to roundals (rings) microwave f or 3 mints ..heat 1sp oil in a wok put lauki rings in it saute then cover i t with lid to get more soft texture...after few mints remove the roundels from wok in to a plate..heat oil in the same wok crackle heeng ..jeera ..add grated onions ...giner ...green chilly...saute n fry till they get golden brown color...add tomato puri...saute ..and add 1 bowl cream or malai...cook it till oil leaves the sides of a wok...mix salt ...haldi ...lal mirch..garam masala...kitchen kng masala...pudina pwdr...mix well and add 1 glass water ..let it cook for 2/3boils ...then add lauki roundals...mix and cover it with lid ...cook on low flame after few mints off the flame ....at the time of serving garnish eith coriender leaves ...onion and tomato

Simple coconut lauki
Peel and Chop lauki.. Keep the seeds aside.. (We shallow fry them with haldi mircha pwd and namak)
In a kadhai heat 1 tsp of ghee, add jeera and dalchini.
Add the lauki and salt and let it cook on low flame. Add coconut milk and adjust the consistency according to your choice.
I like it a bit thick..
Simmer for a minute..
That's it.. Yumm healthy lauki is ready in a jiffy.
