You love healthy biscuits and want to try out a batch of bajra flour cookies with jaggery, right? Here's one super simple bajra cookies eggless recipe without baking powder or soda to try out. What inspired me to bake a batch of healthy cookies in airfryer was a pearl millet biscuit post by Parshotam Kaur aunty. When I actually tried the recipe with my twists, I got addicted to these baked beauties.

  • bajra or pearl millet
  • whole wheat flour
  • ghee
  • extra virgin olive oil
  • jaggery
  • ginger

How to make bajra flour cookies with jaggery in airfryer (without baking powder or soda)

1 cup- 240 ml

 2 tbsp- solid ghee
1/3 cup- jaggery powder

Add oil (2 tbsp). I have used extra virgin olive oil.
Whip again until light and creamy. I prefer to use extra virgin olive oil for healthy cookies recipes.
Ass 1 tbsp of milk and whip again.
1 tsp of cocoa powder also goes in . This is optional. If you do not want to add cocoa, skip it.
After mixing everything, it's time to add 1 tsp flax meal. Again, this is optional;.
2 tbsp of desiccated coconut powder goes in. This is also optional. You may add nut powder of choice instead.
Sift 1/2 cup of bajra or pearl millet .
Mix with hands or spatula.
Then sift 1/4 cup of whole wheat flour.

Gather into dough.
Preheat airfryer, oven, convection, otg to 160 degrees celsius for 10 minutes.
Give shapes of choice. Top with nuts.
Bake for 15- 18 minutes at 160 degrees.
Timing might vary from one machine to another.
Let bajra cookies cool down before munching on these healthy biscuits.

Dhokla needs no introduction. The super easy recipe makes a great snack, loved by young and old and kids.I never loved dhokla until I prepared this delicious Gujarati snack myself.
