 When I sent a picture of the eggless VEGAN gluten-free jowar cake with dates to Paro, she was all praise for the chocolate cake. She even ordered me to bake with sorghum flour and banana in airfryer when she comes to meet me after Corona virus. My darling Paro knows how to differentiate between a healthy cake recipe and an unhealthy one. But she is a kid and loves both healthy and unhealthy. However, when bhua is with Paro, I make sure my cute little niece eats only HEALTHY COOKIES AND CAKES.

What is jowar in English?

Sorghum flour (which is gluten-free and packed with nutrients).

 How long does jowar flour last? 

I keep all my flours and powders in the refrigerator so they last longer and do not go bad easily

How do you bake with sorghum flour? 

Well, baking with jowar atta is easy in airfryer, cooker, oven or otg.  You can make a jowar banana cake like I have done or make guilt-free homemade jowar biscuits that are colored with saffron and sweetened with jaggery. The jowar cake and cookies and even a simple jowar banana bread can be your go-to baked goodies for parties and get-togethers once you get a hang of baking with sorghum flour.

Well, you can make jowar roti, jowar cake in cooker ,  jowar banana cake in airfryer, sorghum cake with dates, sorghum flour cake with jaggery. I mean to say there are a plethora of  jowar flour recipes  that are gluten-free and guilt-free as well.

Q. Is this jowar cake soft or hard as the batter looks like dough?

Well, the  jowar banana bread cake is soft, moist, and flavorful. Bananas help bind this millet cakes recipe along with flaxmeal, which is my go-to omega 3 punch (I am a vegetarian and need omega 3 from healthy fats).

Q. I always feel baking with jowar flour is not easy as it does not bind easily. What do you say?

Well, I can bake with sorghum flour or any other gluten-free flour hassle free. All you need to know is how certain flours behave. Just train your hands and mind and you do not need anything else to make baking with sorghum or ragi or any gluten-free flour easy.

That means it is a perfect treat for those with celiac disease, lactose intolerance, and gluten sensitivity. However, this is not a diabetes-friendly cake, since it uses dates as sweetener. Dates are packed with fiber, so one slice should be enough for a diabetic who takes insulin shots (like my parents-in-law).

Since sorghum contains tannins, it is believed to reduce caloric availability, which further lowers the risk of weight gain and obesity. Besides, the Sorghum benefits for heart are immense. The phytochemicals in sorghum play a heart-protective role, reducing the risk of cardiovascular disease.

You should drink a  lot of water and liquid with any fiber-rich ingredient. When you take care of your liquid intake, fiber will not cause constipation. Rather, it would become gel-like (gooey) and aid in elimination.

Is sorghum flour inflammatory?

It is packed with tannins and anitoxidants and therefore, anti-inflammatory.

Jowar is rich in phytochemicals that are known to have blood glucose-lowering properties. Besides, they help reduce cholesterol. Research finds that sorghum extracts have hypoglycemic activity in which control sugar levels in blood.


1 cup= 240 ml

1/2 cup- jowar atta

3 tsp- cocoa powder

2 tbsp- flaxmeal

1 tbsp/sachet- instant coffee

2 bananas

10-12 pitted/deseeded dates

1/2 tsp- salt

1/2 tsp- baking powder

1/4 tsp- baking soda

1/2 tsp- cinnamon powder

How to bake with sorghum flour (jowar cake)

Soak dates in 1/2 cup of water for 1-2 hours.

Then grind to paste with bananas. Add salt, cinnamon powder, flax meal, coffee, and cocoa powder.

Next sift the flour along with raising agents.

Fold the batter. Do not over mix.

Preheat the oven, airfryer, convection, otg to 160 degrees c for 10 minutes.

Bake at 160 degrees celsius for 30-35 minutes or until a skewer comes out clean.

Allow the jowar cake with dates to cool down before slicing it.

Remember, it is a gluten-free cake and might crumble if you cut it when hot.
