If you thought bread making was an arduous task, then I bring to you one super easy yet nutritious bread recipe that uses dates as sweetener, needs no proofing time, and requires no bread basics experience. Hanji, it's still called a bread, which should work absolutely like a sandwich bread or something that you can toast and enjoy.
I am absolutely in love with this beauty. As I am still away from home, I don't have my bread tins here, so chose to bake a roundel bread. So happy to have chosen this path.

However, I do not suggest quitting whole grains for millets as these ancient grains are not appropriate for everyone. People with thyroid might face some issues if they take to a millet diet.

All food sources come with some amount of anti-nutrition factors, which may inhibit the absorption of nutrients in the body or trigger thyroid dysfunction if taken in large quantities. But there is a safer way to make millets and grains safer, that is, by soaking, sprouting, and roasting, which help eliminate or reduce anti-nut factors. 

Sprouted grains are a good addition to the diet of a person with thyroid issues, especially those with high thyroid levels.

millet recipe ingredients

1 cup 240ml

1/2 cup Millets of choice ( I have used little millet) - I have take whole millets, but if you want, you may coarsely grind millets and then soak

2 tbsp psyllium husk

2 tbsp flaxmeal

1/2 cup water

1/2 TSP salt

2 tbsp coconut

1tbsp melon seeds or seeds of choice

3-4 deseeded dates ( or any sweetener )



How to make vegan Indian bread with whole millets

Soak millets overnight or for at least 8-10 hours. This will help them release tannins and anti-nutrients.

Discard the water and you can use it for watering plants.

Soak dates for 1 hour or longer. 

Add 1/2 cup of water to the millets, throw in dates, nuts and seeds of choice, flaxmeal, psyllium husk and all other ingredients. Mix.

Preheat the oven, airfryer, convection, otg to 180 degrees for 10 minutes.

The millet bread dough will be loose and sticky.

Pour into a bread baking tin and bake for 40-50 minutes. If the dough looks too tight before baking, pour 1 tbsp of water on the bread tin. This will keep the top of the bread moist and it won't dry up.

Let the gluten-free millet bread cool down before slicing it.

Enjoy the vegan sandwich bread with onions, tomatoes, and cucumber with a dash of oregano, black pepper powder, and black salt. 

You may use the fermented mustard sauce as healthy mayonnaise. I will post the oil-free mayo recipe soon.
