But first, what is allspice?

Well, allspice is the dried berry of the evergreen allspice tree from Jamaica and the Caribbean. Allspice has a distinct flavor profile and reminds you of cinnamon, cloves, nutmeg and pepper. So when you cannot find allspice berries, let's try combining all these healthy ingredients to make an allspice substitute that boosts the flavor of your bakes and shakes.

Making your own allspice is easy. You will be surprised that you need just a handful of allspice ingredients to make your DIY substitute for this strong flavoring mix.

You need 1/8 tsp of nutmeg.

1/4 tsp of black pepper corns, 1/2 tsp of cloves, and 1 tsp of cinnamon powder. However, some people often look for a recipe of allspice substitute without cloves. In that case, you may even add a little amount of bay leaf.

You may increase or reduce the amount of these spices according to your taste preference. But bear in mind that nutmeg shadows the flavor of everything else. So do not go overboard with nutmeg. Less is more.

Dry roast all the ingredients. I have dry roasted all spices in airfryer. But you may do so on your cooktop.

Airfrry at 200 deg c for 4-5 minutes. Grind to powder and store the ground allspice in an airtight container. Enjoy homemade allspice mix.

Stay safe. Stay blessed until we meet next.

Can we use the soaked water for millets? Does millet need to be soaked?

Do millets contain anti-nutrients? Yes, they do. In fact, all whole grains, including oats, contain phytates, which bind to minerals and make their absorption difficult for the body. Soaking is the first step toward reducing anti-nutrients from millets. Soak for at least 6-8 hours to make digestion easier. Discard the soaked water and then proceed to the next step of cooking. Remove foam from top to reduce gassy elements from millets.  How long should millet be soaked before cooking? Soaking the millets overnight is a safe practice. Soaking breaks down the phytic acid in millets or for that matter grains and nuts. Phytic acid hinders the absorption of minerals and nutrients in food, including calcium, iron, and zinc. How? Phytates bind to minerals and nutrients and make their absorption difficult in the gut. Your tummy finds it tough to digest millets in that case. So soaking millets and draining off that soaked water makes it easier on your tummy.  Are millets safe for thyroid? Does
