you asked for the egg-free, no oil plum cake recipe for Christmas [here is my eggless gur wala fruit cake with sooji]

 Now that you are already in Xmas mood, it's to make some indulgent cakes and cookies. Of course, you are also interested in keeping things simple, healthy, and a little less guilty. Ravneet Bhalla presents an eggless oil free cake recipe for the season of plum cakes. this one uses no oil, no alcohol, no booze, no rum, and no refined ingredients. the egg-free sooji cake can be steamed in a cooker and baked in air fryer or oven. let's start making my version of easy plum cake without oil. to start with, let's squeeze some juice from oranges. if you don't have a juicer, you can follow this trick to juice oranges and eat the pulp, which is purely fiber and yum too. never through it!

no oil cake ingredients 1 cup=240 ml 1 cup sooji 1/2 cup- orange juice 1/4 cup thick curd 1/2 cup- jaggery 1/2 cup- honey nut mix 1/4 tsp- orange powder 1 tsp baking powder a pinch -baking soda 1/2 cup- carrot (grated) 1/8 tsp-salt 1 tbsp- flaxmeal

we need 1/2 cup of orange juice. next take 1/2 cup of jaggery powder in a bowl. 
add the honey nut mix that we prepared in another video. this is nothing but nuts soaked in honey for a few days. if you don't have it handy, you may boil nuts, apricots, raisins, and fruits of choice in water for 5 minutes. 
strain and mix with a little bit of jaggery. let them soak in jaggery for half an hour. then they should be ready for use in this recipe. 

we need 1/2 cup of the nut mix. 

Let's stir in orange juice. we also need 1/4 cup of thick curd or hung curd or greek yogurt. since we are not using added fat in this recipe, make sure you go for thick curd. now let's flavor the cake with spices of choice. 

i have not added anything except homemade orange powder here as my honey nut mix already had a lot of spices. but feel free to drop in cinnamon powder, a pinch of nutmeg/jaiphal, a hint of ginger powder and cloves.  the winter season is all about spices that warm up your body and soothe your mind. 

1/2 cup of grated carrot goes in for the eggless carrot cake. add 1/8 tsp of salt before stirring in 1 cup of semolina.  

i love to add flax meal in my healthy recipes for the omega 3 punch. add 1 tbsp of flaxmeal here and mix. 

here if you want, add 1/4 tsp of instant coffee powder for a hint of flavor. at this stage, grease a baking dish and dust with flour. remove excess atta. this prevents the cake from sticking to the baking pan. preheat your airfryer to 160 deg c for 5 min. 
if you want to bake in cake in cooker, preheat it for 10 min. i have steamed the cake in idli molds.
let's add 1 tsp of baking powder here along with 1 pinch of baking soda adn 2 tbsp of curd on top. 

Fold the batter and do not overmix. at this stage, i went ahead and added 1 tbsp of homemade beetroot powder too. but that's optional. pour the thick batter into the cake pan and tap the tin. always leave half of the vessel empty when baking a cake. this helps give a flat cake top.bake plum cake in air fryer for 40-50 min at 160 deg c. similarly, steam the cake for 10-15 min (more or less) at the lowest temperature.

check if done. let the cake cool down before slicing it. the sooji cake will feel a little hard initially on top but it will continue to soften with time and tastes best and more flavorful the next day. stays good at room temperature for 3-4 days in winter season. please try out the eggless plum cake recipe and share your feedback with me. do not forget to support the channel.
