Instant Amla Pickle | How To Make Amla Pickle Easily


Perhaps what has drawn you to this post is your love for amla pickle. But what if I say it is one quick way to make amla achaar? Would you believe my words? Well, you cannot ignore it, since you are already aware of my love for one pot! This post takes inspiration from amla achaar posed in anyonecankoach by Madhumita.




When your dad compares your amla pickle recipe with that of his mom, what does this tell you? Hello friends, this instant pickle won over my dad in an instant, who compared this with his mom-made amla pickle. My grandmom was a true homemaker, dedicated to the kitchen and her family. She had numerous authentic recipes under her belt. Unfortunately, she was gone long before I could start exploring the culinary world. It's been 25+ years! Nevertheless, she must be happy seeing me experiment with healthy food choices, because she was herself a stickler to healthy food - would make every remedy at home. Dad says they never fell ill when his mom was around.

Since my parents are here these days, so I will continue to experiment with healthy food for them, so dad can relive his mom-made recipes that he often talks about. I am nowhere close to my grandmom's culinary skills, seriously. But I am happy I am able to ignite those magical moments for dad with some of my experiments.


This amla pickle will make a pickle hater fall in love with condiments. As with all instant recipes, you need a 2 or 3-liter pressure cooker for this amla pickle recipe. Please note the need for standardizing your cookers for recipes before trying out any instant recipe.

I have been experiencing severe hair fall for quite some time. My concern has led me to do extensive research on hair.

Since childhood, I have been hearing a lot about amla's benefits for hair. So I wanted to give amla for hair a try. I have also made a miracle hair oil that helps with hair fall, greying hair, and dandruff. Here's the recipe.




Not only this, it is loaded with vitamin C, which helps you fight infections and get an immunity boost.

Ingredients
1/8 cup olive oil (the original recipe uses sesame oil) or 4 tbsp oil
250 grams gooseberries or 500 gram amla pieces -chopped & deseeded
3 tsp each of coriander powder, red chilli powder, salt, nigella seeds powder
Little  amount of black salt
2 tsp jaggery (optional)- I did not add this time
1 tsp each of haldi (turmeric), fenugreek or methi powder, hing (asafetida) 

How to make Amla Pickle

Put amla pieces in warm water for a deep cleansing effect.
Deseed gooseberries and chop into small pieces.
Take a kitchen towel and spread amla pieces for drying.
Once they dry out completely, they are ready for pickling.
Take a 3-liter pressure cooker.
Add oil.
Top it with amla pieces.
Add salt, turmeric, haldi, red chilli powder, black salt, fenugreek powder, black salt, and jaggery (if you want amla pickle to be sweeter, add little more jaggery)
Close the lid with weight or whistle.
Cook on high flame for 2 whistles. 
Do not cook for longer, else amla might burn.
Release pressure immediately. 
It's time to mix all and relish this tangy sweet amla pickle .
Add the amla to a sanitized glass jar and store in the refrigerator.

The layering goes like this:
L1: Oil (1/4 cup)
L2: 1/2 kg amla (chopped and deseeded)
L3: Salt, turmeric, red chilly powder, Kalonji (nigella seeds), roasted fenugreek powder, hing (asafetida)
L4: 5-6 Jaggery pieces
Gave 3 whistles and tadaa!
Release pressure, open and mix.
There might be small bits of jaggery pieces here and there. Worry not Just mix and mash with a spatula and the chatpata pickle is ready to be savored.
Keep the sweet amla pickle refrigerated for a longer shelf life.

This amla achaar recipe also belongs to Anna's mom. I have made addition of hing to the original recipe. I find this recipe easy to make. Not only this, I love the pickle, which tastes tangy & tasty.




Amla Pickle Ingredients

10-15 amla pieces (soaked in warm water for half an hour and then dried for a couple of hours)
Mustard seeds- 1 tbsp
Hing- 1 pinches
Salt - 2 tbsp
Dried ginger powder (saunth)- 1 tsbp
Red chilly powder - 1/2 tsp or more (depending on taste)
Water- 1/2 tbsp
Mustard oil- 1/2 cup or more

Recipe

  1. Make sure the amla pieces are dry.
  2. Take a heavy bottomed vessel.
  3. Heat oil.
  4. Add hing.
  5. Add mustard seeds. Once they splutter, add salt, haldi, and red chilly powder.
  6. Add amla pieces.
  7. Mix well.
  8. Sprinkle a few drops of water over them.
  9. Mix.
  10. Cover & cook for 10 minutes.
  11. It may take little longer. 
  12. Once done, sprinkle dried ginger powder.
  13. Done. 
  14. Relish with rice, roti, parantha!
