So I have experimented with a few gluten-free options to come up with the best gluten-free cookie recipe. The recipe has a secret ingredient that gives it substance and enhances its flavor too. Ingredients for easy, healthy besan cookies: Baking with chickpea flour

1 cup=240 ml
Makes 16 cookies

1/2 cup minus 1 tbsp- besan/chickpea flour
1/2 cup- powdered poha (1 cup poha makes 1/2 cup powder)
2 tbsp- solid ghee/butter
2 tbsp- olive oil or butter/ghee
1/4 cup- or more organic jaggery powder (I like it less sweet)
sesame seeds
1/4 tsp- black salt
1 tbsp thick curd or milk (I have added curd)


How to bake with chickpea flour: Besan Cookies Gluten Free

Whisk together oil, ghee, and sifted organic jaggery powder. Remove any jaggery grits. Else, these might ooze out of baked goodies, spoiling their looks/visual appeal. LOL .

Whisk for 2-3 minutes or more until it all looks pale and foamy.
Add salt and whisk again for a few seconds.
Add curd and whisk again for 1 minute.
Now it's time to stir in powdered poha. Mix with a spatula or hands.
DO NOT TRY TO KNEAD.
Then stir in besan or chickpea flour in small batches. Avoid adding the whole of it. You may be left with 1 tbsp of besan. Adding the whole 1/2 cup of besan might give you a different result.
Mix with a spatula and roll it out into a dough using a rolling pin on a greased or dusted surface.
Sprinkle sesame seeds as a layer on top.
Press gently with a rolling pin.
DO NOT APPLY FORCE PLEASE.
Make round balls with a bottle cap or cookie cutter.
Make cuts on the outline for design. You may want to keep it simple instead.
Decorate wth slivered pistachio in the center.
Bake or airfry in a preheated machine (preheat to 160 degrees for 5 minutes) for 12-16 minutes at 160 degrees. Might take a couple of minutes more or less, depending on your machine settings.
Allow the gluten-free besan cookies to cool down properly before starting to munch on crunchy bites.

    1. Follow the same temperature...though timing might vary slightly...but bake for the same amount of time first..if the cookies look uncooked, you can bake for an extra couple of minutes..remember,
      besan cookies tend to cook faster
