Holi is long gone, but I couldn't resist making thandai cookies with semolina using homemade thandai mix. The best thing about these crunchy munchies is that these are chemical free and amazingly fragrant and delicious.

It's a wrong perception that jaggery cookies turn soggy/chewy after a few days. One cookie experiment after another with jaggery has proved that jaggery cookies, too, remain crunchy (crispy) days after baking.

Ingredients for Semolina Thandai Cookies

3/4 cup- semolina/suji (I added in batches of 1/4th cup thrice)
2 tbsp- solid ghee (refrigerate ghee for 30 mts before baking) - I make 5-minute ghee
1 tbsp- extra virgin olive oil (or ghee/butter)
1 tbsp- hung curd/thick curd/greek yogurt
1/4 cup- homemade thandai powder (or almond meal if you do not have thandai mix)
1/4 cup or more- organic jaggery powder


How to make Semolina Cookies Without Baking Powder, Soda

I am sharing the link to homemade Thandai mix here. Try that out first. If you do not have thandai powder, replace it with almond flour or meal instead to make semolina almond cookies with jaggery and ghee.

1. Take solid ghee and olive oil in a bowl.
2. Add organic jaggery powder and whisk well until it looks light, fluffy, and creamy.
3. Add hung curd and whisk again for 1 minute.
4. Mix 1/4 cup semolina and mix with a spatula.
5. Mix thandai powder and stir it well.
6. Mix 1/4 cup semolina and mix.
7. Add the remaining 1/4 cup of semolina and mix.
8. Cover and refrigerate the semolina cookie dough for 30mts.
9.  Remove the dough from the fridge.
10. Roll out into a thick chapati - make cookie shapes. This is a fragile dough, which will keep breaking, but if you use my trick (check the video), you can easily give shapes and bake a beautiful batch of Indian semolina biscuits.
11. Place on an airfryer basket or baking tray and refrigerate the same for 30 mts again. This will help cookies retain shape in the airfryer/oven.
12. Preheat the airfryer to 160 degrees for 5 minutes. Oven/convection should be preheated for 10 minutes.
13. Bake/airfry semolina cookies for 10-12 minutes or until they turn slightly golden at the edges.
14. Let Indian semolina biscuits cool down on a cooling rack before munching on these crunchy bites.
