A little bit of my love for khari history

Four years ago, I started to bake cookies, cakes, rusks, biscottis, and puffs. Jeera puffs were one of my favorite purchases in my favorite bakery -Kwality bakers. I wanted to try these lip-smacking puffs for a long time. I must tell you whole wheat croissants have been a favorite with my younger brother as well :) Today, was the day when I did attempt them - though bakeries and confectionery shops use maida (all purpose flour/refined flour) and dalda ghee, I never bring these home. Rather, prefer to bake anything with whole wheat flour, besan (chickpea flour), oatmeal, ragi flour, barley, maize, among other healthy, nutritious cereal grains.

Ingredients

1 cup= 240 ml
1/2 cup -whole wheat flour 2 tbsp oats kasuri methi jeera - 1tsp salt ghee-3 tbsp (total) 1 tbsp extra whole wheat flour+ 2 tbsp ghee 1/4 cup- milk (boil) with 1 tbsp ghee


How to make healthy baked atta mathri in airfryer for Indian snacks recipe

Heat milk along with 1 tbsp ghee.
Turn off the heat when milk boils. Add roasted jeera, 2 tbsp oats powder, salt, red chilly flakes to the hot milk and mix. Mix 1/2 cup of whole wheat flour. Mix and combine into a dough. Rub kasuri methi over the dough.
This will release flavors.
DO NOT KNEAD. Just gather the ingredients and keep aside for 30 minutes.
Meanwhile , you should also prepare the filling with 2 tbsp ghee and 1 tbsp flour. Take solid ghee and beat it. Then add flour and refrigerate for 30 minutes. PLEASE CHECK THE VIDEO.
After 30 minutes, roll out the dough into a thin chapati. Brush the ghee-flour mix . Grab one side of the flattened dough and fold like a parcel. Refrigerate for 30 minutes.
Again, after 30 minutes, follow the process. Refrigerate for 30 minutes.
Repeat the process after 30 minutes.
Refrigerate for 10 minutes.
Preheat the oven, airfryer, otg, convection or stoovetop for 10 minutes at 160 degrees.
For stovetop baking in kadahi for baked atta mathri without oven, pour sand or salt as a layer in cooker or kadahi. Cover and set aside for heating for 10 mins.
Bring out the dough from the refrigerator and immediately cut into cookies.
Bake for 15-20 minutes or until done.
Let the baked multigrain mathri cool down.
Enjoy crispy, flaky atta mathri in airfryer.
