1/2 cup+1/4 cup- jowar atta (sorghum flour) 3 tbsp- desi ghee (solid) or 2 tbsp butter 1 tbsp milk/curd/water 1 tbsp- flaxmeal (optional) chocolate chips 1/4 cup- jaggery powder
1 tbsp- cocoa powder


How to make healthy cookies with jaggery

Powder jaggery along with 2 tbsp jowar atta. I did this to break down jaggery grits. Pulsing with flour helps this process.
Next add 3 tbsp of solid ghee and start whipping the mix. This is known as the creaming process in baking terminology.
This will take time-up to 3 minutes. You may use a hand whisk or an electric beater.
Add flaxmeal and milk./water/curd.
Mix again until it looks well incorporated.
Add cocoa powder.
Sift jowar atta in batches and add the whole of the amount given in the cookie recipe only if your dough is too loose. Stop where you get a soft dough. The tighter the cookie dough, the harder the cookies.

If you want to make the cookies melt in the mouth for someone who cannot munch on them, skip the liquid in the recipe and adjust flour accordingly. Aim for a soft dough consistency again.
If you are not willing to use jowar atta, you may substitute with flour of choice.
Preheat oven, convection, otg to 160 degree celsius for 10 minutes. Airfryer can be preheated for 3-5 min only. It is the best appliance to own. I have shared my love for airfryer in another post. Check the reasons you should buy an airfryer.
Add chocolate chips or chopped chocolate and gather into a ball.
DO NOT KNEAD.
Flatten like a thick chapati. Make shapes. Bake for 8-12 minutes at 160 degrees celsius.
Let hide and seek like jowar cookies cool down before packing them in an airtight container.
Enjoy with a hot cuppa.
Guilty indulgence is never recommended.
