Baked Besan Burfi Recipe Aneko Mein EK (Indian Airfryer Recipes)

Punjabis love besan recipes and this Punjaban is no different. This besan recipe of burfi-cum-cake-cum-halwa is an innovation that just happened out of my love for Mysore Pak. No, I have never tasted the authentic version, but surely given it a try at home. The one I tried was too yummy to resist. Absolutely lip-smacking. But this besan burfi recipe is a little different.

When I posted this recipe on my healthy recipes channel, I was unsure how it will be welcomed by my friends and followers. But it has been a sweet surprise for me as the recipe received a great response. In fact, many of you have already tried out the recipe and validated it, sharing your amazing feedback with me.

No, this besan halwa burfi is not for diabetics nor is it for someone counting calories. Of course, it is not for the calorie-conscious, weight watchers, and dieters either.  But if you have a sweet tooth and want to add a little more nutrition to your diet, replace refined sugar with jaggery, which is more nutritious and mineral-dense than its white counterpart.

I love to sweeten my food with jaggery just like my dadi would do. She had some of the most interesting ideas to make food healthier. LOve her for that!

So let's come back to the besan burfi like cake or cake-like halwa burfi recipe. Whatever you name it, the besan recipe is a keeper and the addition of jaggery does not spoil its taste (as some of you might doubt). Some people often question: how does jaggery taste in bakes? Why do you use jaggery in everything?  Some even say that jaggery is not healthier than refined sugar.

My response :

jaggery does not ruin taste of food. It enhances nutritive value.

Jaggery gives a deeper hue to your food, thanks to its iron and mineral content. So you have a sweetener handy that gives you some benefits too. Why would you not add jaggery to your food when it is healthier than refined counterpart?

Stay active and kicking, friends. So you will never have to bother about adding a few extra calories from jaggery to your diet.

Jaggery is way healthier than sugar but not for diabetics or weight watchers. For normal people like me who are conscious of what goes in and exercise regularly, jaggery is a nutritional alternative to refined sugar, which is only empty calories. I am a health researcher myself sweetie. I work in this field.

I have baked besan halwa cake in airfryer but you can make this delicious sumptuous treat in your oven, otg, convection too.

Adding this to my Indian airfryer recipes :) Do read my post on why an airfryer is the best investment in your culinary lab.

Substitute

you may use roasted or unroasted besan flour. if you take dry roasted chickpea flour, the taste of this easy besan halwa burfi would increase. Roasting enhances flavors too...I have used unroasted chickpea flour though.

How to make besan burfi in airfryer

Mix ghee, water and cardamom. Whip and blend until it turns gooey.
Mix with besan.
Preheat oven, airfryer, otg, convection to 140-degree celsius for 10 minutes.
You do not need to preheat an air fryer for 10 mins - 5 minutes will do.
Pour the besan burfi batter into a greased baking pan.
Bake for 12-25 minutes. Baking timing varies from machine to machine.
In my Indian air fryer, it was done in 12 minutes. I checked after 8 minutes and then kept it longer for 4 minutes.
But some of you have baked in oven and otg and the baked besan burfi took almost 20-25 minutes.
So keep an eye on your easy burfi after 12 minutes and decide the timing accordingly.
Happy baking, friends.
Stay healthy. Eat healthily. Remain active & kicking!

Can we use the soaked water for millets? Does millet need to be soaked?

Do millets contain anti-nutrients? Yes, they do. In fact, all whole grains, including oats, contain phytates, which bind to minerals and make their absorption difficult for the body. Soaking is the first step toward reducing anti-nutrients from millets. Soak for at least 6-8 hours to make digestion easier. Discard the soaked water and then proceed to the next step of cooking. Remove foam from top to reduce gassy elements from millets.  How long should millet be soaked before cooking? Soaking the millets overnight is a safe practice. Soaking breaks down the phytic acid in millets or for that matter grains and nuts. Phytic acid hinders the absorption of minerals and nutrients in food, including calcium, iron, and zinc. How? Phytates bind to minerals and nutrients and make their absorption difficult in the gut. Your tummy finds it tough to digest millets in that case. So soaking millets and draining off that soaked water makes it easier on your tummy.  Are millets safe for thyroid? Does
