Before beginning with the recipe, I would like to thank my friend, pratibha Bondia Kheria for gifting me this huge bundle of joy. Pratibha deals in Pearl Mithila Makhana and I am literally surprised at the size of her product. Every makhana is huge in size and similar to the other.

 Makhana is a superfood and has plenty of health benefits. It is a functional food as well as a therapeutic aid. You might not be aware of the fact that makhana is rich in antioxidants, proteins, and fiber. It is a boon for skin health, liver, heart, boosts immune health, and improves overall wellbeing.

1 cup- powdered makhana (fox nuts) 1/2 cup- almond powder 1/4 cup- pistachio powder 1/2 cup- jaggery powder 1/4 cup- malai 8 tbsp- water rose petals or cardamom powder

you will need to dry roast each ingredient separately- makhana, pistachio, almonds. Dry roasting enhances the flavor profile of nuts and seeds. In the case of makhana, its flavor improves and it becomes more palatable when you dry roast it. Otherwise, unroasted makhana sticks to your gums and becomes the most irritating thing on earth.

Then grind to powder separately. We need 1 cup of makhana powder, 1/2 cup of almond powder, and 1/4 cup of pista powder.

Take 1/2 cup of jaggery powder in a bowl and cream with 1/4 cup of malai. I added rose petals here. But it's optional. You may add cardamom powder instead.

If you don't have malai, you may use 3 tbsp of ghee instead. Mix well. Add 2 tbsp of water and mix again. Add  1/4 cup of makhana, pista powder and mix and add almond powder 1/4 th cup. Add 1/4 cup of water and cook on medium flame.  Add the remaining makhana and almond powder and continue to cook until the mixture is cooked well.

Shape the makhana sweet. I gave it the shape of a peda. Decorate with pista powder and almond powder. Set the makhana sweet for navratri fast in the fridge. Enjoy!
