You Will Forget Maida & Sugar When You Bake CHOCOLATE CHIP COOKIES With Ragi, Jaggery Without Soda

I have shared several ragi biscuits with jaggery recipes on Ravneet Bhalla's channel. So what makes this recipe of eggless ragi cookies different? What are the   ragi cookies benefits ? Why should you even bother to make them at home?  Well, homemade cookies are a healthy treat that allows you to cherry pick the ingredients based on their nutrient profile. for example, this millet biscuit recipe gives you a little more nutrition and chocolaty flavor in every single bite. To me, these are a perfect combination of texture, taste, and health. If you are on a gluten-free diet, the ragi chocolate cookies recipe without wheat flour is for you.

Ingredients 240 ml=1 cup 1/2 cup- sprouted ragi atta 1/2 cup jaggery powder 2 tbsp butter (homemade) 1 tbsp- flax meal 2 tbsp-water chocolate chips 1/4 cup almond flour 1/4 tsp organic vanilla powder 1/4 cup cacao powder

Let's see how to make ragi cookies without sugar.
Set aside 1/2 cup of jaggery powder. I love this brand because the taste and flavor of gur takes me to Punjab.
In a bowl, add 1 tbsp of flax meal, which is a powdered form of toasted flax seeds. Stir in 2 tbsp of water and 1/4 tsp of organic vanilla powder for flavor and set aside for 10 mins.
Let's start creaming jaggery with 2 tbsp of homemade fermented butter, which is healthier than the normal butter you get from the market. it has no additives, no stabilizers. it's plain fermented butter from curd.
Once it looks all mixed well and fluffy, stir in the flax egg and cream again. it will take only a few minutes.
Add cacao powder and mix.
Now it's time to sift sprouted ragi atta, which is homemade. i love sprouted ragi more than plain finger millet flour. it is nutty, aromatic, and has a lot of fiber. what's more, sprouted ragi is easier to digest than plain ragi atta because it is sprouted, which means all of its nutrients have been broken down during the sprouting stage. that makes their bioavailability easier to your digestive system. now your digestive organ will thank you for making its job easier.
Mix almond powder.
Add chocolate chips and preheat air fryer to 160 deg c for 5 min. if you want to bake with ragi flour in cooker, preheat it with a layer of salt or sand for 10 minutes. give shapes and top with a few more nuts and choco chips. bake ragi biscuits without wheat flour in air fryer for 10-14 min or longer at 160deg c. check if done, else, bake longer. but don't wait for cookies to harden inside the airfryer. They might harden a lot.
i have baked  ragi cookies without wheat in idli stand as well. bake for 12-18 min or until the top feels done. else bake longer at the lowest flame.
let cookies cool down before munching on healthy eggless millet biscuits for Christmas.

Can we use the soaked water for millets? Does millet need to be soaked?

Do millets contain anti-nutrients? Yes, they do. In fact, all whole grains, including oats, contain phytates, which bind to minerals and make their absorption difficult for the body. Soaking is the first step toward reducing anti-nutrients from millets. Soak for at least 6-8 hours to make digestion easier. Discard the soaked water and then proceed to the next step of cooking. Remove foam from top to reduce gassy elements from millets.  How long should millet be soaked before cooking? Soaking the millets overnight is a safe practice. Soaking breaks down the phytic acid in millets or for that matter grains and nuts. Phytic acid hinders the absorption of minerals and nutrients in food, including calcium, iron, and zinc. How? Phytates bind to minerals and nutrients and make their absorption difficult in the gut. Your tummy finds it tough to digest millets in that case. So soaking millets and draining off that soaked water makes it easier on your tummy.  Are millets safe for thyroid? Does
