Can you make nutella with jaggery? (Buttery Creamy Hazelnut Spread)

Can you make homemade nutella with hazelnuts? yes, hazelnuts are quite expensive but they have a dense nutrient profile. but kids may not be as willing to eat nuts as much as they love to indulge in nutella. so let's make a small batch of healthy nutella with jaggery and eliminate all preservatives, chemicals, and refined sugar from the easy nutella recipe.
there are two types of hazelnuts available on the market -

  • one with skin
  • other without peel

I got a batch of skinless hazelnuts. so that cuts short one step in the process of making nutella.

How to make nutella at home without sugar/oil?

The process begins with dry roasting 1 cup of vitamin E rich nuts for 8-10 min @ 160 deg c. if you want to toast nuts in kadahi, please do so. but do not brown them. the process will be fairly quick in an open vessel. if yours is a hazelnut batch with skin, peel off the skin after toasting. then proceed to the next step. the peel should come off easily once the nuts are roasted. pulse hazelnuts to butter. give some timely breaks to your machine, else it might heat up and burn. the process of turning nuts into a chunky powder and then a creamy butter is so satisfying. but you have got to be a little patient. the nut butter processing takes some time. chalo ji Ravneet Bhalla has shown how to make hazelnut butter at home.
now let's proceed to making nutella hazelnut spread with this butter. add 1 tbsp of cacao or cocoa powder,1/2 tsp of vanilla powder, and 3/4-1 cup of jaggery powder t the same processor and blend until everything is creamy and yummy. do a taste test to see if you need to add more jaggery. you may make it more chocolaty by increasing the amount of cocoa powder to 2 tbsp. but then increase jaggery too. store in an airtight container in fridge and enjoy as a sweet chocolaty spread or butter.
you may even spread hazelnut nutella on chapatis to make them attractive to kids. enjoy homemade food and snacks. ab ek like to ye recipe deserve karti he hai na.. chalo ji, take care until we meet next. bye bye

Can we use the soaked water for millets? Does millet need to be soaked?

Do millets contain anti-nutrients? Yes, they do. In fact, all whole grains, including oats, contain phytates, which bind to minerals and make their absorption difficult for the body. Soaking is the first step toward reducing anti-nutrients from millets. Soak for at least 6-8 hours to make digestion easier. Discard the soaked water and then proceed to the next step of cooking. Remove foam from top to reduce gassy elements from millets.  How long should millet be soaked before cooking? Soaking the millets overnight is a safe practice. Soaking breaks down the phytic acid in millets or for that matter grains and nuts. Phytic acid hinders the absorption of minerals and nutrients in food, including calcium, iron, and zinc. How? Phytates bind to minerals and nutrients and make their absorption difficult in the gut. Your tummy finds it tough to digest millets in that case. So soaking millets and draining off that soaked water makes it easier on your tummy.  Are millets safe for thyroid? Does
