How to make healthy millet recipe for breakfast

To begin making this millet khichdi, chop zucchini and please do a taste test before using zucchini in any recipe. There are a few that taste bitter and might be toxic upon ingestion. they will spoil the taste of your dish and affect your health as well.

chop onion. heat oil in a vessel. by the way this brass vessel is my grandma's gift. It's decades old that has passed from one generation to another but still is in awesome shape.
add mustard seeds and jeera/cumin. let them crackle before throwing in a few sprigs of curry leaves. it's time to stir in ginger green chili paste. sautee little before stirring in sliced onions. we don't want to brown onions. let;s cook zucchini now. mix and cover.cook on a low flame for a few minutes before adding salt. once zucchini is cooked, add all-purpose masala. I have already shared the recipe . it's the best curry powder yo will ever make at home.
wait for the aroma to spread in your kitchen before adding water. the amount of water will be double that of the millet. I am using little millet here. make sure you wash and soak the millet for at least 5-7 hours.

once the water starts boiling, stir in the millet. give it a good mix. chalo ji, bus ho gaya. now you need to cover and cook on a low flame until water dries up.
uske baad, hamara kaam khatam. but ruko, pehle 1 spoon ghee ka to dal dee. this 1 tsp of ghee will infuse so much of aroma and flavor to the millet upma khichdi that bache see le kar bade taq sab iske fan ho janyenge. take my words for it.
when my MIL first made zuchinni upma with suji for us, we didn't even realize that it uses zuchinni, it was simply the most delicious upma I had ever tasted. since then, it's a regular during summers. you can't get bored of it. take my words for it. ek dum lajawab! does anyone make this type of millet upma at home? if so, please share in comments. your views matter. like always, this recipe of my MIL deserves an outpouring of likes. don't forget to share it with your gluten-free buddies who simply love millets and are looking for easy millet recipes. for more such healthy recipes, stay tuned to Ravneet Bhalla's community. let's stay healthy hamesha by making the best food choices. of course, stay mobile, active, and kicking. enjoy and take care until we meet next.

Can we use the soaked water for millets? Does millet need to be soaked?

Do millets contain anti-nutrients? Yes, they do. In fact, all whole grains, including oats, contain phytates, which bind to minerals and make their absorption difficult for the body. Soaking is the first step toward reducing anti-nutrients from millets. Soak for at least 6-8 hours to make digestion easier. Discard the soaked water and then proceed to the next step of cooking. Remove foam from top to reduce gassy elements from millets.  How long should millet be soaked before cooking? Soaking the millets overnight is a safe practice. Soaking breaks down the phytic acid in millets or for that matter grains and nuts. Phytic acid hinders the absorption of minerals and nutrients in food, including calcium, iron, and zinc. How? Phytates bind to minerals and nutrients and make their absorption difficult in the gut. Your tummy finds it tough to digest millets in that case. So soaking millets and draining off that soaked water makes it easier on your tummy.  Are millets safe for thyroid? Does
